Veggie loaded frittata

Ingredients
  

  • 4 eggs large
  • 1 cup halved button mushrooms
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes
  • 4-5 chopped garlic cloves
  • 1 tbsp milk
  • 1 tsp olive oil
  • 1 tsp chopped fresh basil leaves
  • salt to taste
  • crushed black pepper to taste

Method
 

  1. In a mixing bowl, break the eggs and add salt, pepper, milk and the basil leaves
  2. Beat the eggs along with the spices until foamy
  3. In a pan heat olive oil, add the chopped garlic and fry until fragrant
  4. Next add the spring onions and broccoli and fry on high heat for a couple minutes
  5. Add the mushrooms and tomatoes and cook for another two minutes
  6. Now, slightly flatten the veggies in the pan and pour the beaten eggs mixture into it
  7. Cover the pan and cook for five minutes over medium heat or until you see the sides of the frittata browned
  8. Remove on a plate and sprinkle red chilli flakes
  9. Serve hot as it or with some warm bread

Notes

  • You could also add cheese when you add the eggs and veggies in the pan
  • You can choose to add any vegetables of your choice or even meat
  • Butter can be used as an alternative to olive oil
