Method
- Heat a pan with the olive oil and add the garlic. Once fragrant, add the chopped onions and salt. Cook until they soften
- Add the canned tomatoes (with the juice) and mix well. Add the sugar and stir
- Add the wine and let bubble until the sauce thickens. Flavor with the chilli flakes and oregano. When the sauce reduces to half its quantity remove and coolÂ
- Pour over pasta to use fresh or smear on pizza bases. Alternately, store and freeze in air tight containers or freezer bags for later use

Notes
- Sugar is added to balance the acidity of the tomatoes, so don't skip it
- You could also add some crushed black pepper to taste in the sauce
- Adding the wine is optional
