Thai basil chicken

This Thai basil chicken is not only a one pot, delicious and fragrant chicken recipe, but it is a great weekday meal option too! This under 30 minute recipe tastes super with a bowl of steamed rice

Ingredients
  

  • 500 g boneless chicken thighs chopped
  • 3 tbsp oyster or hoisin sauce
  • 3 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 2 tbsp fish sauce
  • ΒΌ cup onion sliced
  • 1 tbsp garlic chopped
  • 2-3 fresh chillis sliced
  • 4-5 stalks spring onion chopped
  • 1 cup fresh basil leaves
  • 1 tsp cornflour
  • 2-3 tbsp chilli oil or any cooking oil
  • salt to taste

Equipment

  • Shallow cooking pot

Method
 

  1. In a small bowl, mix the sauces with the cornflour and keep it aside
  2. Over medium high flame, heat the cooking pot (or wok) with the oil and add in the chilis and garlic. When fragrant, add the onions and spring onion whites and cook for 3-4 minutes
  3. Push these to a side of the wok and add the chicken pieces, in a single layer. Let it stay like this for a couple minutes and then mix with the onions and garlic
  4. Add the spring onion greens and stir through. Add in the sauce mixture and cook until the chicken is fully done. Check for salt and add if needed (all the sauces used above have salt in them)
  5. Add the basil leaves, mix well and remove from frame. Serve your delicious Thai basil chicken with steamed rice or just as is. Enjoy!

Notes

  • You could also use ground chicken for this recipe
  • If you can find Thai basil leaves, do use them in the recipe. I have used my homegrown sweet basil here, which also works well
  • 1 cup - 250 milliltres
  • tbsp - tablespoon
  • tsp - teaspoon
