Spicy tomato chorizo pasta

A delicious and easy pasta recipe made with an instant tomato sauce and spicy chorizo! Weeknight dinners made yummy

Ingredients
  

  • 2 cups pasta cooked al dente
  • ½ cup mozzarella grated
  • 1 cup chorizo sliced
  • 1 smal onion finely chopped
  • 2 medium tomatoes diced
  • 1 tbsp tomato paste or tomato ketchup
  • 2-3 cloves garlic
  • 1 tbsp olive oil
  • 1 tbsp dried Italian herbs
  • 2 tbsp red chili flakes
  • 1 tbsp black pepper crushed
  • 1 tsp sugar
  • salt to taste
For garnishing
  • 6-7 fresh basil leaves

Method
 

  1. Blend together the tomatoes, 2 garlic cloves, tomato paste, olive oil, salt, pepper, Italian herbs and the chili flakes to a smooth paste. Keep this aside

  2. Heat another pot with 4 cups of water and 2 tbsp salt. Once it comes to a roll boil, add and cook the pasta until 90% done
  3. Simultaneously, heat your cooking pot and sauté´the chorizo slices for about 3-4 minutes. Remove and set aside
  4. In the pot, fry the onions and garlic in the the chorizo fat, until soft and fragrant. Then add the prepared tomato sauce
  5. Mix well and cook for 5-7 minutes and then add the pasta (you can add it directly from the pot it is cooking in) and the chorizo

  6. Mix well again to coat everything well in the sauce. Check for salt and then add the cheese and cook until it melts
  7. Remove from flame and serve the spicy tomato chorizo pasta hot, garnished with some basil leaves. Enjoy!
