Salted chocolate banana pudding

A delicious pudding made of caramelised bananas with a touch of whiskey and topped generously with a salted chocolate ganache

Ingredients
  

For the banana pudding
  • 400 g bananas peeled and chopped
  • 70 g unsalted butter
  • ½ cup sugar
  • 2 tbsp whiskey
  • cups milk
  • 1 cup whole wheat flour or plain flour
  • 1 tbsp vanilla essence
  • 2 eggs
For the chocolate ganache
  • ¼ cup cream
  • 2 tsp honey
  • 1 tbsp sea salt flakes
  • 80 g dark chocolate roughly chopped

Method
 

  1. Cook the bananas, ½ cup sugar and 20g butter on medium flame in a pan, until the bananas caramelise. Once done, remove from heat add the whiskey and mix
  2. In a mixing bowl, blend together the flour, milk, eggs, vanilla essence, remaining sugar and butter along with the bananas, until smooth. Grease the pie dish lightly and pour the mixture in
  3. In a pre-heated oven, bake at 160°C for 30 minutes or until just set with a wobbly centre. Remove and cool completely
  4. To make the ganache, simmer the cream and honey in a saucepan, when you see gentle bubbles add the chopped chocolate and remove from heat. Let it sit for 5 minutes and then mix. Slather this over the banana pudding and top it with the salt flakes
  5. You can serve your delicious salted chocolate banana pudding chilled or even slightly warm. Enjoy!

  • If you want to keep the dessert alcohol free, leave the whiskey out
