Mix the flour with the salt, sugar and butter using your hand until it resembles breadcrumbs. Then add the yolks and bring everything together to form a dough
Keep the dough covered and to chill in the refrigerator for 10-15 minutes
Dust your work surface lightly with some flour and roll your cookie dough out - not very thick or thin. Cut out shapes from this using a 4cm cookie cutter. Out of half of them, cut out the centre
Bake these (in two batches), in a pre-heated oven at 170°C, for 10-13 minutes or until the sides of the cookies start to brown. Remove from the oven and let them cool completely
Place a small dollop of the jam on the lower cookie and place the upper half (with the centre cut out) over it
Store in an air tight container and enjoy your delicious, buttery jam sandwich cookies
Notes
If you don't have cookie cutters, you could use caps of small jars/bottles to cut out shapes for your cookies
Don't roll your cookies too thick or too thin. If too thick, the cookies could get tough on baking and if too thin, they will be quite brittle
