Quick and easy pan pizza

An extremely easy and under 30 minutes pan pizza recipe that you can make not only on weekends but even for your weekday meals!

Equipment

Ingredients
  

For pizza base

  • 500 g whole wheat flour or plain flour
  • 250 g water
  • 1 tsp salt
  • 1 tsp baking powder

For pizza sauce

  • 2 medium tomatoes roughly chopped
  • 1 tbsp tomato paste or ketchup
  • 3-4 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp dried Italian herbs
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp sugar

For pizza topping

  • ¼ cup mozzarella cheese grated
  • any toppings of choice I have used peppers, mushroom, chorizo, onion

Garnish (optional)

  • parmesan grated
  • 6-7 fresh basil leaves

Instructions
 

  • Mix together your flour, baking powder and salt. Add water gradually to form a semi stiff dough. Cover with a damp cloth and let it rest for 15 minutes
  • In the meanwhile, blitz together the pizza sauce ingredients until smooth
  • Also, saute´ your pizza toppings (if you wish to) and keep it ready
  • Grease you pan/skillet well with oil and place the dough in the centre. Using your fingers spread it out evenly around it. Keep the edges slightly raised and thick
  • Set this on your stove top, over medium flame. Cook until the underside firms up and forms a crust and the top starts puffing up
  • Then remove from the flame and layer with you pizza sauce, mozzarella and toppings. Also, brush a tablespoon of oil around the edges. Work carefully around your pan, as it is going to be hot
  • Bake this in a pre-heated oven at your maximum oven temperature (mine was 250°C) until the edges of your pizza become golden and crisp. Then carefully remove your pan with the pizza from the oven. Using a spatula, remove the pizza on a plate
  • Garnish your delicious, quick and easy pan pizza with grated parmesan and fresh basil leaves and serve fresh out of the oven!

Notes

  • You can also use self raising flour for this recipe. In that case, you won't need the baking powder
  • If you don't have an oven, you can continue cooking on your stove top too, from step 7. You will just need to keep your pan covered and cook in this case
