Blend together the tomatoes, 2 garlic cloves, tomato paste, olive oil, salt, pepper, Italian herbs and the chili flakes to a smooth paste. Keep this aside
Heat another pot with 4 cups of water and 2 tbsp salt. Once it comes to a roll boil, add and cook the pasta until 90% done
Simultaneously, heat your cooking pot and sauté´the chorizo slices for about 3-4 minutes. Remove and set aside
In the pot, fry the onions and garlic in the the chorizo fat, until soft and fragrant. Then add the prepared tomato sauce
Mix well and cook for 5-7 minutes and then add the pasta (you can add it directly from the pot it is cooking in) and the chorizo
Mix well again to coat everything well in the sauce. Check for salt and then add the cheese and cook until it melts
Remove from flame and serve the spicy tomato chorizo pasta hot, garnished with some basil leaves. Enjoy!
