In a mixing bowl, sift together the flour, cocoa powder, salt, baking powder and soda. Mix well
Using a fork mash the bananas completely and then add in the eggs, oil, maple syrup and vanilla essence
Whisk this mixture very well until well combined and light
Now, gradually add the flour mixture and whisk again, until nothing looks dry
Finally add the hot water and whisk again
In a cup cake wrappers lined muffin tray* pour the chocolate banana cake batter (using a spoon or an ice cream scoop, if you have), until ¾ th full in each cup
Tap a few times to remove any air bubbles. Drizzle the chocolate chips on top and bake in a preheated oven at 180° C for 30 minutes or until a skewer inserted in the centre of the cakes comes out clean
Remove from oven and let it sit for 10 minutes before serving the yummy and healthy chocolate banana muffins, with tea,coffee and/or milk. Enjoy!
