Tomato sauce for pizzas and pastas

Ingredients
  

  • 400 g chopped tomatoes canned or fresh
  • 1 small onion finely chopped
  • 4-5 tbsp garlic finely chopped
  • 2 tbsp olive oil
  • 1/2 cup white wine
  • 1 tsp salt
  • 1 tsp chilli flakes
  • 1 tsp dried oregano
  • 1 tsp sugar
  • salt to taste

Instructions
 

  • Heat a pan with the olive oil and add the garlic. Once fragrant, add the chopped onions and salt. Cook until they soften
  • Add the canned tomatoes (with the juice) and mix well. Add the sugar and stir
  • Add the wine and let bubble until the sauce thickens. Flavor with the chilli flakes and oregano. When the sauce reduces to half its quantity remove and cool 
  • Pour over pasta to use fresh or smear on pizza bases. Alternately, store and freeze in air tight containers or freezer bags for later use

Notes

  • Sugar is added to balance the acidity of the tomatoes, so don't skip it
  • You could also add some crushed black pepper to taste in the sauce
  • Adding the wine is optional
