Heat a pan with the olive oil and add the garlic. Once fragrant, add the chopped onions and salt. Cook until they soften
Add the canned tomatoes (with the juice) and mix well. Add the sugar and stir
Add the wine and let bubble until the sauce thickens. Flavor with the chilli flakes and oregano. When the sauce reduces to half its quantity remove and coolÂ
Pour over pasta to use fresh or smear on pizza bases. Alternately, store and freeze in air tight containers or freezer bags for later use
Notes
Sugar is added to balance the acidity of the tomatoes, so don't skip it
You could also add some crushed black pepper to taste in the sauce
Adding the wine is optional
