Rajasthani junglee maas (mutton)

A four ingredient, delicious mutton curry from Rajasthan

Ingredients
  

  • 300 g mutton on the bone
  • 10 g dried red chilis roughly chopped
  • 4 cloves garlic optional
  • 2 tbsp ghee
  • salt to taste

Method
 

  1. Heat a shallow cooking pot and add the ghee
  2. Once it melts, add the garlic and sautee´until fragrant

  3. Add the mutton and sear it on high flame

  4. Add the chilis, salt and mix well

  5. Over a medium flame, cover and cook until the meat is completely tender. Keep adding ¼ cup of water time to time to cook it
