Method
- Slice the avocado in half and remove the pit. Scoop the flesh out in a bowl and add to it the lime juice, salt, garlic and pepper - give it a good mix
- Place the toasts on a plate and layer it with the mashed and flavored avocado, some salad leaves (optional) and the eggs. Season with just a touch of salt and loads of freshly cracked pepper and serve

- You can choose to cook your eggs any way that you like for this recipe. Boiled, poached and even fried eggs taste goodÂ
