Garlic and lemon pan grilled chicken

A yummy, quick, easy and fresh pan grilled chicken recipe

Ingredients
  

  • 500 g chicken drumsticks skinless
  • 6 tbsp lemon juice
  • 2 tsp lemon zest
  • 4 fat garlic pods crushed
  • 3 fresh green chillis crushed (optional)
  • 1/2 tsp Mediterranean spice mix optional
  • 2 tsp sea salt or to taste
  • 1 tbsp chilli olive oil or regular olive oil

Method
 

  1. Wash the chicken well, pat dry with a kitchen towel and make light gashes on them, using a knife

  2. Add a tablespoon of the oil, spice mix (if using) salt, lime juice, crushed garlic and chillis

  3. Add the lemon zest and mix everything well. Keep this to marinate for at least an hour

  4. Heat a griddle pan and brush some oil on it

  5. Add the chicken drumsticks. Cook for 3-4 minutes and then turn them over, using tongs

  6. Repeat this process until the chicken has a nice golden brown colour and is cooked completely

  7. Remove on a plate and serve hot with salad and/or your choice of dip

Notes

  • Only make light gashes and not deep on the chicken. You do not want the meat to fall off the bone when cooked
  • Adding the spice mix is optional. If you don't have it, you may skip it
  • The chicken needs to marinate for at least an hourĀ 
  • You may use regular salt instead of sea salt
  • I have crushed the garlic and chillis using a mortar and pestle. You could use any grinder, just keep it coarsely ground
  • Heat the griddle pan well before adding the chicken. That way you will be able to get the grill maarks on them
