Mix together the cocoa powder, flour, baking powder, salt and coffee powder
In another bowl whisk together throughly the oil, granulated sugar, vanilla essence with the eggs (add one at a time). Next, add spoonfuls of the flour mixture to the wet mixture and combine using a spatula - do not over mix. Cover and let the mixture chill in the refrigerator for 4 hours to overnight
Before baking, take the powdered sugar in a bowl. Scoop out the cookie dough using a cookie/ice cream scoop, roll between your palms to form a ball, dredge in the powdered sugar and place on parchment line baking tray
Place each rolled dough ball 1-2 inches apart and bake in a pre-heated oven at 180°C for 10-13 minutes. When done, remove and immediately press a chocolate star (if using) in the centre of each cookie
Let them cool on the tray for 5 minutes and then transfer to a cooling rack to cool completely. Repeat with the remaining dough
Your delicious chocolate and coffee crinkle cookies are now ready to be enjoyed with family and friends. Store the cookies in an air tight container so that they don't become dry
