Baked masala French toast

This deliciously healthy recipe of baked masala French toasts is going to become your new favourite breakfast. It's quick, easy, loaded with vegetables and sooo yummy!

Ingredients
  

  • 4-5 bread slices
  • ¼ cup milk
  • ¼ cup baby spinach chopped
  • ¼ cup onions chopped
  • ¼ cup capsicum chopped
  • ¼ cup tomatoes chopped
  • 2-3 chilis chopped
  • 3-4 tbsp coriander leaves chopped
  • 2-3 tbsp black pepper crushed
  • salt to taste

Method
 

  1. Whisk the eggs with the salt, pepper and milk until everything is well incorporated. Add in all the vegetables and mix well once again
  2. Arrange the bread slices in an oven safe dish, in a single layer. Pour the egg mixture over them and spread it out evenly over the slices
  3. Bake in a pre-heated oven for 12-15 minutes, at 180°C, until. Remove the masala French toasts from the oven and serve immediately with ketchup and green chutney. Enjoy!

Notes

  • You can add any vegetables to your toasts that you wish
  • Leave the chilis and pepper out when making for children
  • 1 cup = 250 millilitres
  • tbsp - tablespoon
