Avocado and coriander dip

A versatile and delicious avocado dip that is slightly spicy, very garlicky, tangy and creamy. This no cook recipe is great as a spread and a condiment too

Ingredients
  

  • 2 ripe avocados peeled and roughly chopped
  • 1 cup coriander leaves roughly chopped
  • ¼ cup olive oil
  • 3-4 cloves garlic roughly chopped
  • 2 tbsp black peppercorns
  • 2-3 fresh chilis optional
  • 2 tbsp lemon juice
  • sea salt to taste

Method
 

  1. Add all the ingredients in a blender/mixer jar and blitz until well combined and smooth
  2. This may take a few iterations, but will eventually come together
  3. Check for seasoning and remove the avocado and coriander dip in a serving bowl, garnish with some more chopped coriander and a tablespoon of olive oil. Enjoy as a dip, spread or chutney!

Notes

  • You can also use regular salt or Himalayan pink salt 
  • tbsp - tablespoon
  • tsp - teaspoon
