Eggs are such a versatile food that it never ceases to amaze me and more amazing is that just salt and pepper are enough to enjoy them with. Do you also, share my sentiments? Eggs are wholesome, can be had as any meal (breakfast, lunch or dinner) and are made in so many different ways across the globe.

This recipe is an egg-cellent breakfast/brunch idea. The egg preparation here, called frittata, is an Italian dish – which is very similar to an omelette. When you go through the recipe, you will observe that, it’s only the style of cooking that is different. This is an easy, quick, filling and a yummy  egg meal. While I have added only vegetables here, you could also add meat and/or cheese along with herbs and seasonings of your choice. Making a frittata will ignite your cooking creativity for sure!

If you love eggs then you ought to try this out. In this recipe, I have brought together the goodness of eggs and vegetables.  Below is my recipe for this super awesome brunch idea! Also, this could be your quick, easy and wholesome weekday dinner too 🙂

Veggie loaded frittata

Ingredients
  

  • 4 eggs large
  • 1 cup halved button mushrooms
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes
  • 4-5 chopped garlic cloves
  • 1 tbsp milk
  • 1 tsp olive oil
  • 1 tsp chopped fresh basil leaves
  • salt to taste
  • crushed black pepper to taste

Instructions
 

  • In a mixing bowl, break the eggs and add salt, pepper, milk and the basil leaves
  • Beat the eggs along with the spices until foamy
  • In a pan heat olive oil, add the chopped garlic and fry until fragrant
  • Next add the spring onions and broccoli and fry on high heat for a couple minutes
  • Add the mushrooms and tomatoes and cook for another two minutes
  • Now, slightly flatten the veggies in the pan and pour the beaten eggs mixture into it
  • Cover the pan and cook for five minutes over medium heat or until you see the sides of the frittata browned
  • Remove on a plate and sprinkle red chilli flakes
  • Serve hot as it or with some warm bread

Notes

  • You could also add cheese when you add the eggs and veggies in the pan
  • You can choose to add any vegetables of your choice or even meat
  • Butter can be used as an alternative to olive oil
