An easy and lip-smacking recipe for homemade tomato sauce for your pizzas and pastas that you can make in under 30 minutes
One of the few things that are always handy in the kitchen are homemade sauces and/or chutneys. If you talk about Indian cuisine, with some coriander or tamarind sauce/chutney ready you could relish pakoras or make a chaat. When talking about Italian cuisine having a tomato sauce could be a life saver. And that’s why I have my tomato sauce for pizza and pasta always handy.
You need very few ingredients to make my quick, easy and versatile tomato sauce that you can freeze and store. Besides, this is my version of the arrabbiata sauce that I use in a lot of ways. For instance, I lather some over warm toasted baguettes, add some heavy cream and use as a dip, spread the sauce over nachos and so on. And all this besides using it in pizzas and pastas! I have used canned tomatoes here, but feel free to use fresh cherry tomatoes if you wish. Also, the wine can be replaced with either chicken or vegetable broth. If you substitute the wine/broth with water, you would compromise on the flavour. For this reason, I would urge you against using water.

Equipment
- Shallow cooking pot
Ingredients
- 400 g chopped tomatoes canned or fresh
- 1 small onion finely chopped
- 4-5 tbsp garlic finely chopped
- 2 tbsp olive oil
- 1/2 cup white wine
- 1 tsp salt
- 1 tsp chilli flakes
- 1 tsp dried oregano
- 1 tsp sugar
- salt to taste
Instructions
- Heat a pan with the olive oil and add the garlic. Once fragrant, add the chopped onions and salt. Cook until they soften
- Add the canned tomatoes (with the juice) and mix well. Add the sugar and stir
- Add the wine and let bubble until the sauce thickens. Flavor with the chilli flakes and oregano. When the sauce reduces to half its quantity remove and cool
- Pour over pasta to use fresh or smear on pizza bases. Alternately, store and freeze in air tight containers or freezer bags for later use
Notes
- Sugar is added to balance the acidity of the tomatoes, so don't skip it
- You could also add some crushed black pepper to taste in the sauce
- Adding the wine is optional
