I am having so much fun churning up summer recipes and sharing them with you. And, I am particularly excited with this one. I am sure you’ve already guessed why would that be. Yes, I am sharing with you a sugar and dairy free mango ice cream recipe. Mango, the king of fruits, is a favourite with a lot of us. And since summer is a time of ice-creams, popsicles and coolers, I decided to make a healthy and easy ice-cream, so that, we can have it guilt free. And of course as many times as we want 🙂 Not only is my recipe super healthy, but also an extremely quick and easy one. You are not even going to need an ice-cream maker for this super easy sugar and dairy free mango ice-cream. Read on, if you are at the moment, feeling the same excitement as I am.

Mango connection

When we were growing up, summers would be spent with our grandparents in Kolkata. And, as loving as they always were, they spoilt us to death with all summer fruits and more. Mangoes, litchis you name it and we had it! So, you see, I have really fond memories associated with the king of fruits. Moreover, in India, summers are flooded with a wide range of mango varieties – alphonso, langra, badami etc. And my grandma, would whip up so many mango recipes using these, that always left me so amazed. So, this sugar and dairy free mango ice-cream recipe, is my dedication to her. She, of course, did not make it this way, nonetheless, summers always remind me of her.

Quick and easy recipe

Like, I mentioned earlier, this is the most easy mango ice-cream recipe that you may come across. You are free to choose any variety of mangoes for this guilt-free dessert. However, personally, I feel alphonsos work the best. Having said that, let me also tell you, I haven’t used them here. The reason being, I sadly haven’t yet spotted them in London. And when I do, I sure will have another ice-cream batch ready. The variety of mangoes, I have used for my sugar and dairy free mango ice-cream, is the one from Peru. And since, they tend to be a little less sweeter than the Indian mangoes, I have used honey as a sweetener. But, you may skip the sweetener completely, if the fruit that you are using is sweet enough.

Additionally, this is only a three ingredient ice-cream recipe (leaving the honey out). Also, you are not going to need to repeatedly take the ice-cream out of the freezer, churn it, and put it back again. So easy, completely guilt-free and fuss free. This one just keeps getting better!

I so love recipes that are hassle free, and this one being a dessert, is on top of my favourites list! So, I guess, enough said and it is time to hop on to checking the recipe out.

A complete guilt-free summer treat!

Ingredients
  

  • 2 mangoes
  • 2 medium ripe bananas
  • 1/2 cup chilled unsweetened almond milk or any other milk
  • 2 tbsp honey optional

Instructions
 

  • Peel, de-seed and chop the mangoes roughly

  • Peel the banana and chop roughly
  • Put these in food-grade, freezer friendly bags. Keep them in the freezer for 6 to 8 hours
  • In a mixer jar, add the fruits, the milk and honey

  • Blend to a smooth mixture
  • Transfer to an ice-cream tin and refrigerate for another 4 to 6 hours

  • Scoop and serve with some chopped, fresh mangoes. Enjoy!

Notes

  • You could use ready-made frozen bananas and mangoes as well
  • Over-ripe bananas also work well in this recipe
  • If you like some fruit bits in your ice-cream, add some chopped mangoes in the blended mixture just before freezing
  • tbsp - tablespoon
