A delicious and easy pasta recipe made with an instant tomato sauce and spicy chorizo! Weeknight dinners made yummy
Chances are that you like a yummy and spicy pasta, since you are here! And my spicy tomato chorizo pasta is just what you maybe looking for! And because it is also a very quick and easy recipe, it becomes all the more appealing. This pasta is something I make often for my weeknight dinners. After all, what more could you ask for if you have an under 30 minute recipe for dinner! You will of course need a sweet and spicy chorizo ring for this recipe, which is easily available in super markets. And also a tomato sauce. I make this very quick tomato pasta sauce for my chorizo pasta, which can also be used even otherwise for homemade pizzas and other pastas. So, that one is a keeper too! The sauce too is slightly spicy, as I have added both crushed black pepper and red chilli flakes in it. However, you can choose to omit any as per your taste.
My chorizo pasta is not very saucy, like you see in the picture. It just coats the pasta and the chorizo really well. And that is how I like it. Although, you could tweak the consistency of your pasta sauce as you like it. You could make it as saucy or as little to customise it.

Super easy and quick pasta
Now, while this may not be your classic one pot recipe, it surely is perfect for your weeknight meal. That is because, you can get going with all the parts of the delicious, spicy tomato chorizo pasta, simultaneously. For instance, while you set your pasta to cook, you can blitz your ingredients for the tomato sauce. Once that’s done, sauté the chorizo slices, the onions and garlic and add your cooked pasta to finally bring everything together. If you wish, you could also add some vegetables too, in this. Bell peppers, sweet corn, blanched broccoli or even mixed frozen veggies work very well. However, this time I haven’t added any.
Also, as far as choosing which pasta to use, you are the king. I had some shell pasta in hand so that’s what I have gone ahead and made. But you could make this with any that you have. I feel, penne, bow, macaroni and fusilli would be some of the other amazing options. Finally, garnish your yummy chorizo pasta with as much cheese as you like and a few basil leaves. Add some toasted or garlic bread on the side and enjoy this super delicious yet quick meal, fresh and hot!

Spicy tomato chorizo pasta
Equipment
- Shallow cooking pot
Ingredients
- 2 cups pasta cooked al dente
- ½ cup mozzarella grated
- 1 cup chorizo sliced
- 1 smal onion finely chopped
- 2 medium tomatoes diced
- 1 tbsp tomato paste or tomato ketchup
- 2-3 cloves garlic
- 1 tbsp olive oil
- 1 tbsp dried Italian herbs
- 2 tbsp red chili flakes
- 1 tbsp black pepper crushed
- 1 tsp sugar
- salt to taste
For garnishing
- 6-7 fresh basil leaves
Instructions
- Blend together the tomatoes, 2 garlic cloves, tomato paste, olive oil, salt, pepper, Italian herbs and the chili flakes to a smooth paste. Keep this aside
- Heat another pot with 4 cups of water and 2 tbsp salt. Once it comes to a roll boil, add and cook the pasta until 90% done
- Simultaneously, heat your cooking pot and sauté´the chorizo slices for about 3-4 minutes. Remove and set aside
- In the pot, fry the onions and garlic in the the chorizo fat, until soft and fragrant. Then add the prepared tomato sauce
- Mix well and cook for 5-7 minutes and then add the pasta (you can add it directly from the pot it is cooking in) and the chorizo
- Mix well again to coat everything well in the sauce. Check for salt and then add the cheese and cook until it melts
- Remove from flame and serve the spicy tomato chorizo pasta hot, garnished with some basil leaves. Enjoy!
