Hi guys, if you’ve seen my previous recipe posts you would know, that I am a total chai person. My morning cuppa, the first thing after I wake up, is mandatory. The day wouldn’t begin if I don’t have it. And another cuppa in the evening. So, to make my chai time more special, I try to make something that I can have along with it. Appe pan sabudana vada, baked mini dal samosas, healthy lemon loaf cake are some such tea time recipes of mine. And to add to the list, here are my super easy and quick spicy potato egg rolls. These stuffed deliciousness, will make your tea time or coffee time experience even more supreme. Soft flatbreads covered with a fried egg and wrapped around a flavourful potato mix, is what these rolls are made of.
“Roll” is a very Kolkata term. When I would visit my grandparents during summer vacations, I would gorge on the yummy egg and chicken rolls that streets of the city had to offer. However, back in Mumbai, these are called “frankies.” And in London, they are known as wraps. So many names to the same food 🙂 No matter what you choose to call them, they are a delight to have and effortless to make.
You will be able to make these spicy potato egg rolls within 15 minutes. In fact, I saved even more time by using ‘recycled’ potato stuffing. And what I mean by that is, I had made aloo parathas the previous day, so I used the leftover filling. Isn’t that genius? You can find my aloo paratha – spiced potato stuffed flatbread recipe here.
The rolls
For the rolls, I have used store bought tortillas. Nonetheless, you can absolutely use homemade chapatis or Indian flatbreads too. These spicy potato egg rolls are quite healthy too. There is minimal use of oil here and it has the goodness of eggs. The rolls also have some sliced cucumbers and onions in them. However, there is no stopping you from adding more veggies. You could used sliced capsicum and peppers or loads of salad leaves.
These frankies or rolls, are pretty filling too. So, it makes for a great lunchbox idea and a quick weeknight dinner. In fact, I love making these for Sunday breakfasts as well. They taste delicious even if you skip the filling. Yes, that is right. Make the rolls with the egg and add your sliced veggies sprinkled with some chaat masala. And you will be good to go. You can pack these rolls for a summer outing in the park or your back garden. Team it with with some hot tea or refreshing soda. Kids will love it and so will adults.

Kolkata style egg chicken roll
Spicy potato egg rolls
Ingredients
- 4 tortillas or chapatis
- 4 eggs
- 8 tbsp spicy potato mixture
- 1 medium cucumber
- 1 medium red onion
- 4 tsp crushed black pepepr
- 4 tsp chaat masala
- 2 tbsp lemon juice
- 2 tbsp fresh corriander chopped
- 2 tsp oil for cooking
- salt to taste
Instructions
- Keep the potato mixture ready. Use the recipe for the potato stuffing given in the aloo paratha - spiced potatoes stuffed flatbread recipe
- Deseed and slice the cucumbers and onions
- Apply some salt, pepper and lemon juice to them. Keep it aside
- Break and egg in a bowl and add salt and pepper
- Beat it lightly
- Heat a pan, grease it with some oil and pour the beaten egg. Don't worry about the shape, it doesn't matter
- In two minutes place the tortilla or chapati over the egg. Press it down with a spatula and cook for couple more minutes
- Flip it on to the other side and cook until the flatbread swells
- Remove and place it on a flat surface. Sprinkle some chaat masala over the fried egg on the bread
- Place two tablespoons of the potato mixture on the tortilla/chapati
- Add the seasoned cucumbers and onions. Drizzle some chaat masala and chopped coriander leaves
- Roll the stuffed tortilla from one end until you reach the other
- Serve the yummy spicy potato egg rolls hot or at room temperature with some ketchup. Enjoy with your favourite beverage on the side!
Notes
- You may add two eggs per flatbread, if you so wish
- The rolls taste yummy even if you use only egg whites to make it
- You could increase or reduce the amount of stuffing, as per your preference
- You may make the egg roll without the potato stuffing too
- Any salad vegetable can be used along with/instead of the cucumbers and onions
