My assumption is that, if you are checking this recipe post out, you love fried rice! Moreover, you also are a fan of spice. Then, my friend, you are at the right post. My spicy chicken fried rice, is super spicy and delicious. And not just that, this is super quick and easy too. So, this could be your lunch box recipe and your weekday dinner too. No kidding! You will be able to make and prep for this fried rice recipe, in under 30 minutes.

I have made and used, a fresh bird’s eye chili paste along with fresh garlic, to spice the rice up. And these are quite fiery. But, if you can’t find this variety, you can use any that’s available in your region. While, I have used around five to six of these, you can always adjust, according to your heat tolerance. On the other hand, I have also added some bell peppers and corn kernels to my spicy  chicken fried rice. And this is not only because I love my veggies too, but also to cut through the spice in the rice. The sweetness of these veggies add a relief to the otherwise, hot rice. Nonetheless, this is an optional bit. So, if you do not prefer, you may skip adding any vegetables.

Easy recipe

The primary flavouring agent in this Chinese recipe, is the chili and garlic paste. And apart from this, I have added some readily available sauces. So, this is a fairly quick and easy recipe. Since, I also haven’t added many vegetables, the cutting and chopping time is greatly reduced too. However, you could very well use frozen vegetables, as well. Additionally, I have sliced the boneless chicken thighs in thin strips. Not only does this aid is cooking quicker, but is also easier to handle while eating.

This spicy chicken fried rice works best when made with left over rice. Especially, a day old ones. Nevertheless, you can also use freshly cooked rice too, just make sure that it is well cooled.

Equipment

  • Shallow cooking pot

Ingredients
  

  • 1 cup cooked long grain rice
  • 1 cup chicken thighs boneless & cut in thin strips
  • 4-5 cloves garlic
  • 5-6 bird's eye chilis (or whichever you have available)*
  • 1 medium onion sliced
  • 1 cup bell peppers finely chopped
  • 1 cup corn kernels
  • 2 tbsp black pepper freshly crushed
  • 1 tbsp soy sauce
  • 2 tbsp Sriracha or any other chili sauce
  • 1 tbsp vinegar
  • 1 tbsp oil
  • salt to taste

Instructions
 

  • In a mortar-pestle (or a mixer grinder) coarsely grind the garlic and chilis

  • It should yield around 2 tablespoons of the garlic-chili paste

  • Marinate the chicken pieces in salt and pepper, until further required

  • Heat the oil and add the chili garlic paste (be careful, the heat in the chilis, when it hits the oil can cause your nose and throat to burn)

  • When the garlic turns fragrant, add in the onions. Fry until translucent

  • Now, make a well and add the chicken

  • Stir fry on a high flame, until you don't see any pink meat and then add in the veggies

  • Stir fry for another couple minutes and add the Sriracha, vinegar and soy sauce

  • Mix well and add the rice and some salt (if required at all since all sauces and the marinated chicken have salt). Stir and combine the rice well with the chicken and vegetables. Cook for another 2-3 minutes and the remove fro flame

  • Serve the yummy and spicy chicken fried rice, along with a fried egg and a slice of lime, hot & fresh! Enjoy

Notes

  • Please adjust the amount according your heat tolerance
  • Also, kindly adjust the amount of back pepper and hot sauces according to taste
  • Adding the vegetables is optional. Additionally, you can add any as per your taste
