Hello lovely people. I am sharing with you one of my favourite snack recipes. And that is my sautéed vegetables pizza toast. Not only is this a quick and easy recipe, but it is also loved by one and all. These pizza toasts are a hit with children and adults alike. And why wouldn’t they be? The have the goodness of stir fried vegetables, a yummy pizza sauce and an overload of stringy mozzarella! Furthermore, you can serve these for breakfast, brunch and evening snacks. In fact, I love making some for my evening tea sessions too. Additionally, they are an amazing idea to give to kids for their after-school hunger too. Sounds super amazing right? The fact that you don’t need a pizza base makes this recipe even more easy. These cute, colourful toasts are as visually appealing as they are yum to taste.

Coming to the pizza sauce. I always have a batch of my tomato sauce for pizzas and pastas handy. And that is a life saver! I usually make a batch, that lasts me for two weeks. So, you could try my recipe and do the same. Nevertheless, even the store bought ones work. And if nothing else, you could also replace it with tomato ketchup.

Array of vegetables

For the pizza toast topping, I have used chopped, mixed veggies. While I have used the frozen ones, you could use fresh vegetables as well. However, make sure that, they are finely chopped. This makes it easier to arrange over the bread slices. For your sautéed vegetables pizza toast, the choice of vegetables is completely personal. Here I have used a mix of carrots, bell peppers, peas, sweet corn, broccoli and onions. You could also add tofu and/or paneer.

Also, the choice of bread – brown or white – is up to you. Either ways, your pizza toast will taste fabulous.

Ingredients
  

  • 8 bread slices
  • 2 cups mixed vegetables finely chopped
  • 1 medium onion finely chopped
  • 2-3 fresh chilis finely chopped
  • 2 cloves garlic finely chopped
  • 1 cup pizza sauce
  • 2 cups mozzarella shredded
  • 1 tbsp mixed dried herbs
  • 2 tbsp chili flakes
  • 1 tbsp olive oil
  • salt to taste

For garnishing

  • 6-7 basil leaves

Instructions
 

  • Heat a shallow cooking pot with the oil and add the garlic and chilis

  • Once they are fragrant, add the onions and sautee until soft. Then put in the vegetables, salt, herbs and chili flakes. Cover and cook until the veggies are done and set aside

  • Arrange your bread slices on a parchment paper lined baking tray. Spoon in 2 tbsp of the pizza sauce on each slice and even it out with the back of a spoon

  • Next, sprinkle the mozzarella over them

  • Spoon around 3-4 tbsp of the sautéed vegetables, over the cheese and bake in a pre-heated oven for 5-7 minutes (or until the cheese melts) at 200°C

  • Garnish with some basil leaves and serve the sautéed vegetables pizza toast , warm and fresh. Enjoy!

Notes

  • You can eliminate the chilis and chili flakes from the recipe when making for kids
  • If you don't have an oven, you can toast the bread slices in step 5 in a pan too. Put the pizza toast on a greased pan, cover and cook over medium flame until the cheese melts
  • You can add any vegetables of your choice
  • tbsp - tablespoon
