Salted chocolate banana pudding

A delicious pudding made of caramelized bananas with a touch of whiskey and topped generously with a salted chocolate ganache. Perfectly toasty!

It is the first day of December and I have started with my festive baking! I kicked off my baking spree for the month with this decadent salted chocolate banana pudding. This festive pudding is made extra special since I’ve made it with caramelised bananas. The aptly charred slices of bananas elevates flavours of the pudding even more. These are then combined with flour, eggs and milk and then baked, until just set. And when cooled, I have slathered the pudding with a thick, salted chocolate ganache and topped it with some frozen berries. The contrasting flavours of the dark chocolate and the sweet, caramelised banana pudding is a wonderful combination. Oh, and did I mention, to make the pudding extra toasty, I have also added whiskey to it. Didn’t I tell you, that this one was perfectly festive?

You could enjoy this pudding at room temperature or even chilled, I love scooping through it slightly warm. A 30 seconds run in the microwave makes the banana pudding gooey, keeping the ganache intact. Not only does this taste wonderful, but it also gives an amazing mouthfeel. You’ve got to try this one yourself to know how brilliant this tastes. Moreover, you are not going to need too many ingredients to whip up your salted chocolate banana pudding. Furthermore, this is also an under 30 minute recipe. I know, this one just keeps getting better and better! In fact, I made this one evening last week, for a friend, with everything I had at hand. This banana pudding is one of the easiest desserts you could put together and impress your loved ones. Since it is warm, toasty and delicious, it is perfectly festive too.

Serving suggestions

You could bake the pudding in an 18 centimetre pie dish or even in individual ramekins. Also, if you want to keep this dessert alcohol free, you may leave the whiskey out.

Equipment

Ingredients
  

For the banana pudding

  • 400 g bananas peeled and chopped
  • 70 g unsalted butter
  • ½ cup sugar
  • 2 tbsp whiskey
  • 1½ cups milk
  • 1 cup whole wheat flour or plain flour
  • 1 tbsp vanilla essence
  • 2 eggs

For the chocolate ganache

  • ¼ cup cream
  • 2 tsp honey
  • 1 tbsp sea salt flakes
  • 80 g dark chocolate roughly chopped

Instructions
 

  • Cook the bananas, ½ cup sugar and 20g butter on medium flame in a pan, until the bananas caramelise. Once done, remove from heat add the whiskey and mix
  • In a mixing bowl, blend together the flour, milk, eggs, vanilla essence, remaining sugar and butter along with the bananas, until smooth. Grease the pie dish lightly and pour the mixture in
  • In a pre-heated oven, bake at 160°C for 30 minutes or until just set with a wobbly centre. Remove and cool completely
  • To make the ganache, simmer the cream and honey in a saucepan, when you see gentle bubbles add the chopped chocolate and remove from heat. Let it sit for 5 minutes and then mix. Slather this over the banana pudding and top it with the salt flakes
  • You can serve your delicious salted chocolate banana pudding chilled or even slightly warm. Enjoy!

  • If you want to keep the dessert alcohol free, leave the whiskey out
