Rajasthan is a very colourful and history rich, western state of India. And as celebrated it’s culture is, it’s food too is rich and royal. And my Rajasthani junglee maas (mutton) recipe too, has a royal story to it. This mutton curry is a very easy one and requires just four ingredients to make it. Yes, that it right. You only need mutton, ghee, red chilis and salt! The story is, when the royals would go on their hunting expeditions, which lasted for days, they would carry only these ingredients. And when they would make a kill, they would use just these four things to then cook it up. So, jungle means wild in Hindi and junglee refers to ‘the wild’ and maas means meat. Therefore, the name junglee maas literally means meat cooked in the wild way.
Four ingredient recipe
Are you wondering, how only four ingredients could make a delicious curry? These were exactly my thoughts too before I made this. And when I did, I got my answer. The mutton and chilis cooked and satuee´d in ghee delivers a beautiful colour and an amazing taste. With just four ingredients, you must have figured this a pretty easy recipe. However, it is a time taking one as well. Mutton takes time to cook. And since the recipe demands it being cooked by searing it throughout, and not pressure cooking, it is a time taking one. Nonetheless, let me tell you, the end result is immensely wonderful and yummy.
In my recipe, I have also added some garlic pods. But that is completely optional. The traditional recipe doesnt have it so if you wish to leave it out, you may.

Traditionally the chilis that are used in Rajasthani junglee maas (mutton) recipe are mathania mirch. This variety is a native to the state. But since I couldn’t find theme here, I have used a combination of Kashmiri chilis and my regular dried red chilis. So that, my mutton curry gets the colour and the heat too.
What to pair it with?
This yummy and easy curry, goes very well with Indian breads. Dip into this gorgeous red curry with some ghee or butter laden rotis/naans and enjoy a hearty meal. Nevertheless, I also love having the Rajasthani junglee maas (mutton) with some steaming hot rice.

Rajasthani junglee maas (mutton)
Ingredients
- 300 g mutton on the bone
- 10 g dried red chilis roughly chopped
- 4 cloves garlic optional
- 2 tbsp ghee
- salt to taste
Instructions
- Heat a shallow cooking pot and add the ghee
- Once it melts, add the garlic and sautee´until fragrant
- Add the mutton and sear it on high flame
- Add the chilis, salt and mix well
- Over a medium flame, cover and cook until the meat is completely tender. Keep adding ¼ cup of water time to time to cook it
- Serve the Rajasthani junglee mass (mutton) with any Indian bread and enjoy!
