And I finally have dosas on my blog! I have many a times proclaimed our never ending love for idlis, but not for dosas. And the reason isn’t because we do not enjoy these savory rice crepes, it is because it has taken me the longest to master the art of making them. These delicious savory, fermented rice and lentil crepes are best enjoyed thin and crisp. While maa makes them so perfectly it is only now, after quite a bit of practice that I have arrived. To make our dosa brunch even more special I made us masala dosas and sambar and coconut chutney to accompany them. Moreover, the yummy potato filling for the masala dosas are my maternal grandma’s recipe. Babai as I lovingly called her, was an incredible cook and anything she made tasted magical.
And this recipe of the potato filling for masala dosa is a keeper of a recipe. Everyone on the maternal side of my family swears by it and I am no exception. While most other recipes for this potato masala is pretty standard, what makes babai’s recipe stand out is a secret ingredient. And that ingredient is sambar powder. You read that correct and trust me it makes the most delicious difference to the otherwise quite plain tasting potato filling. In fact both my husband and I love it so much that we don’t even need chutneys or sambar with our masala dosas. We just love having them with the yummy stuffing itself.

This gem of a recipe of the potato filling for masala dosa is truly amazing. Not just tasty but it is also super quick and easy to make. Moreover it is one of those much loved one pot recipes that we all keep bookmarking. Made with boiled potatoes and basic Indian spices, you will want to make this every time you have dosas on your menu. I especially love the wonderful fragrance that curry leaves and freshness the coriander leaves lend to it. This potato recipe is so amazing that, you could even forgo making sambar. Just a side of a lovely chutney will be quite enough too. You can team this potato masala even with pesarettus (moong dosas). I’d done that the last time I’d made them and it tasted fantastic.
As far as the batter for dosas go, I have like always, used store bought freshly ground batter. This is similar to the rice and lentil batter I use to make my idlis. I haven’t yet quite cracked making the perfect idli–dosa batter but I sure know how to make some mean chutneys, tasty sambar and a yummy potato masala. Potato filling for masala dosa
Equipment
- Shallow cooking pot
Ingredients
- 4-5 medium potatoes boiled and peeled
- 3 medium onions sliced
- 2-3 fresh chilis finely chopped
- 1 tbsp mustard seeds
- 6-7 curry leaves
- 1 tsp turmeric powder
- 1 tbsp sambar powder
- 2-3 tbsp coriander leaves finely chopped
- 1 tbsp lime/lemon juice
- 2-3 tbsp oil
- salt to taste
Instructions
- Break the peeled potatoes with your hand, this gives a lovely creamy texture to the potato masala. Cutting the potatoes with a knife will not yield same results
- Heat the cooking pot with oil, over medium heat, and add the mustard seeds. Once they splutter, add the curry leaves, chilis and onions. Add in a pinch of salt and cook until the onions soften
- Add the turmeric powder and sambar masala, mix well. Add in the potatoes in batches and keep mixing them with the onion masala. Sprinkle 2-3 tablespoons of water and add salt to taste. Mix well, cover and cook on low heat for 5-7 minutes
- Turn the heat off, remove the lid and add the lime/lemon juice and coriander leaves. Mix well and keep it aside, your filling is ready
- Serve your yummy potato filling for masala dosa stuffed inside the dosa or on the side, along with chutney and sambar. Enjoy!
