An absolutely pretty and tasty summer refresher, this pomegranate basil mojito is sure to bring cheer to your summer vibes this season
How many times have you, at a restaurant, ordered something that looked pretty on the other table? I definitely have said “I’ll have what they are having” quite a few times! Of course something visually attractive does get our attention. And this super pretty pomegranate mojito is one of those drinks. The gradient effect that this thirst quencher has, is absolutely heart melting and eye catching. I had made a sizable batch of this virgin mojito a few days back, for the teetotalers at our house party. To my surprise, I did find even the beer drinkers make a go at it. Not only is this a pretty drink, but is tastes so good as well. After all, who wouldn’t love the combination of sweet pomegranate pearls, lime juice and fresh basil leaves!
You must be wondering why basil leaves in a mojito, that traditionally has mint leaves? The answer to that is my flourishing basil plant. I’d propagated some basil leaf stems a couple months back, that I eventually planted. In time, it has grown into a beautiful plant with gorgeous leaves. While I’ve made pesto, used them in my recipes etc this time I decided to use it to make my pomegranate mojito. And I am so glad I did. Like mint leaves, basil too has a very fresh flavor, that works brilliantly in my virgin pomegranate mojito. However, if you do not have access to them, replace them with mint leaves.

Quick, easy & tasty
You do not have to be an expert mixologist to be able to make my pomegranate basil virgin mojito. It is a very simple recipe that comes together in just about 10 minutes. All you need to do is muddle all the ingredients together and top it up with some sparkling water. I have used honey as the sweetener for my drink here, but feel free to use any of your choice. One note of caution that I’d like to put across here is that, if you use jaggery powder to sweeten your mojito, you could get a darker colored drink. The brown color of jaggery tends to make the food that they are used in, darker. Nonetheless, if that isn’t a concern for you, by all means do use it. 🙂

Pomegranate basil virgin mojito
Equipment
- muddler
Ingredients
- 4 tbsp fresh pomegranate pearls
- 6-8 fresh basil leaves
- 3 tbsp lime/lemon juice
- 2-3 tbsp honey or sweetener of choice
- 500 ml sparkling water
- ice cubes to taste
For garnishing
- 2 lime wedges
- 3-4 mint leaves
- 2 tbsp fresh pomegranate pearls
Instructions
- In a glass, muddle together the pomegranate pearls, basil leaves, lime juice, honey until well crushed
- Divide and pour this into two separate tall glasses, add in the ice cubes and pour in the sparkling water in each glass. Stir to mix well
- Garnish with a wedge of lime, some mint leaves and fresh pomegranate pearls and serve chilled. Cheers!
