A lip smacking and a very healthy recipe of roasted corn cobs made the Mumbai street style way
With the heavy downpour of the Mumbai monsoon, also comes it’s yummy seasonal foods. From piping hot chai to varieties of pakodas, vada pavs etc the list is endless. Oh how my mouth is watering even thinking of them. And among them, is also this lip smacking Mumbai street style roasted corn. In that rainy, wet climate biting into a juicy corn cob, that has been rubbed generously with lime juice, chili powder and chaat masala is heavenly. While it is the raining in Mumbai now, we are enjoying the summers in the UK and this recipe works great in both weathers. In the UK, this Indian style roasted corn makes for a delicious barbecue recipe.
This roasted corn actually doesn’t even have a recipe so to say, it is that easy. But, since I have so many beautiful memories associated with them, that this definitely deserves a blog post of it’s own. While enjoying the bhutta with friends, strolling on the Marine Drive and munching on it would be special, what is more special to me is when daddy would make them for us at home. Most monsoon, he would get the bhuttas or corn cobs and roast and season them for the entire family. And we would all sit together with our chai and devour them. So, last evening when I made it here, he was I first, I sent my roasted corn pictures to. And together, on the call we relived all those lovely bhutta memories. 🙂

The seasoning
Since, most of us are firing up our grills in the summer here, you could, add a few corn cobs in there too. And make this delicious Mumbai street style roasted corn. The only things you will need thereafter, are some common Indian masalas. You could make your roasted corn as spicy and/or as tangy as you’d like it to be. Besides being a a lovely vegetarian addition to your barbecue party menu, this is also a great evening snack. These masala rubbed roasted corns go along well with both, a cup of chai and even a glass of chilled beer. The time we had ours, it was a rainy London evening and so we enjoyed our corn cobs with chai. And it really felt like sitting in my Mumbai home balcony, watching the rain drop and devouring my bhutta. 🙂
If you’d like to make these roasted corns even more yum, you could apply butter on them as well. Just as they’ve been roasted, apply butter to the warm corn and then the spices. But I love having mine without the butter. The smoky fragrance of the roasted corn and the flavourful masalas on them, are dreamy enough for me. The only other bit that I love adding, is a sprinkling of coriander leaves. I love the fresh fragrance that it lends to the yummy, roasted corn cobs.

Mumbai street style roasted corn
Equipment
- Wire roaster or grill
Ingredients
- 2 corn on the cob
- 2 tbsp chili powder or to taste
- 2 tbsp chaat masala
- 1 lime cut in halves
- 2 tbsp coriander leaves finely chopped
- salt to taste
Instructions
- Shuck the corns and place them on a wire roaster or a grill, over medium high flame
- Keep rotating and roasting them until well roasted from all sides. Once done turn the flame off and remove the corn cobs to a plate
- In a small bowl, mix together all the masalas along with the salt. Dip the lime in the spice mix and rub it all over the corn, squeezing it simultaneously
- Sprinkle the coriander leaves and serve the yummy Mumbai style roasted corn fresh and warm along with a cup of chai or a glass of chilled beer, if you wish. Enjoy!
Notes
- Once well roasted you could also apply butter to your corn, in step 3, to enhance the flavours
