These cookies are my childhood favourite and I still love them. If these are something you or your children enjoy too, here is an easy recipe for it.
Even though I love chocolate biscuits, jam sandwich cookies come a very close second. These buttery cookies sandwiched together with raspberry jam are a house favourite. Turns out that the husband too has always been a fan of these. Not only are these jammy dodger cookies yummy, but they look so pretty too. The jam poking out of the hollow upper cookie, I think, looks really pretty. Besides being a great tea time snack, these jam sandwich cookies are quite a popular festive treat. They make for a fantastic addition in a Christmas cookie box. In fact, linzer cookies, that look similar are a much loved Christmas cookie too. The difference between these jam cookies and linzer cookies are that the later also has almond flour in them.
However, my jammy cookies is only a five ingredient recipe. Made with butter, sugar, flour and egg yolk you can make these cookies in under 30 minutes. In fact these cookies are so much fun to make that you could even get your kinds involved. They will enjoy cutting the shapes out of the cookies. It will make the enjoyment of eating the cookies even more for them. These delicious cookies are chewy and buttery, just how we all love them to be. And when in the oven, the entire house smells so fragrant, so festive and that’s a bonus.

Customize it
You can choose to modify these cookies, as per your choice. You could have heart cut outs, rounds or keep it to stars, like I have. Also you could sandwich your cookies with your or your kids favourite jams. Some popular choices are strawberry, apricot and mixed fruit jam. In fact, you could also use Nutella and chocolate sauce for the filling. Additionally, while I have used cookie cutters to make my cookies, you could use bottle caps in case you do not have these cutters. So, with just this one recipe you could create so much variation in your jam sandwich cookies.
Since we are nearing Christmas now, you could bake these lovely cookies for your festivities and gifts. Everybody and anybody you serve these to, will love them. And if you happen to try this cookie recipe or any other of mine, I’d love to hear from you. You can share your feedback in the comments below. Eat hearty!
Jam sandwich cookies
Equipment
- Oven
- Cookie cutter
Ingredients
- 250 g plain/all purpose flour
- 200 g unsalted butter
- 100 g powdered sugar
- 2 egg yolks
- ½ cup raspberry jam or any flavour
- 1 tsp salt
Instructions
- Mix the flour with the salt, sugar and butter using your hand until it resembles breadcrumbs. Then add the yolks and bring everything together to form a dough
- Keep the dough covered and to chill in the refrigerator for 10-15 minutes
- Dust your work surface lightly with some flour and roll your cookie dough out - not very thick or thin. Cut out shapes from this using a 4cm cookie cutter. Out of half of them, cut out the centre
- Bake these (in two batches), in a pre-heated oven at 170°C, for 10-13 minutes or until the sides of the cookies start to brown. Remove from the oven and let them cool completely
- Place a small dollop of the jam on the lower cookie and place the upper half (with the centre cut out) over it
- Store in an air tight container and enjoy your delicious, buttery jam sandwich cookies
Notes
- If you don't have cookie cutters, you could use caps of small jars/bottles to cut out shapes for your cookies
- Don't roll your cookies too thick or too thin. If too thick, the cookies could get tough on baking and if too thin, they will be quite brittle
- g - grams
