Fluffy, light as air pancakes on a Sunday morning for breakfast. Does that sound like a plan to you? If yes, then you ought to try my healthy wheat flour pancakes recipe. So that, you can make them often and have them guilt free, whenever you like! And if you think, healthy cannot be tasty, then you would have to re-think. Because, even with whole wheat flour and without refined sugar, my pancakes turn out perfect. To make it even more wholesome, I have also added protein powder to my pancake batter. While I have used a coffee caramel flavoured one, you could go with any of your choice. If adding a vanilla flavoured protein powder, you could also add some vanilla essence in the mix. I don’t think, a pancake recipe could get any healthier.

On the other hand, if you want to leave the protein powder out, you absolutely may. Additionally, if you’d like your pancakes to be gluten-free, you may substitute the wheat flour. Some of your options could be buckwheat flour, almond flour and oat flour. To make this a dairy free recipe, replace milk with almond milk. And to make these healthy pancakes vegan, substitute eggs with flax eggs. See, one amazing recipe and so many variations.

With the ingredients I have mentioned, your pancake batter may look runny. And you will probably have doubts regarding how fluffy your pancakes could be. But, worry not and be rest assured that your batter will give you amazing, soft, light pancakes. 🙂

Pancake toppings

Like you see, I have topped up my healthy wheat flour pancakes with loads of fresh berries and bananas. That’s how I like it. Also, I have also layered then with some Nutella. But do not limit your options to just these. Maple syrup is another popular choice of topping, even flavoured greek yoghurt tastes great with pancakes.

Healthy wheat flour pancakes

Equipment

  • Tawa (Indian skillet) or any skillet

Ingredients
  

  • 1 cup whole wheat flour
  • 1 cup milk
  • 3 large eggs
  • ¼ cup vegetable oil any neutral smelling oil works
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp protein powder you may choose to leave this out too
  • 1 tbsp maple syrup or honey
  • 1 tsp salt
  • oil spray/oil for greasing

Options for pancake topping

  • fresh fruits
  • maple syrup
  • nutella

Instructions
 

  • In a mixing bowl, take the flour, protein powder (if using) and salt. Mix it lightly and then add the milk
  • Using an electric or a hand whisk, blend this until smooth and homogenous
  • Next add the oil followed by all the other ingredients and mix again until everything is mixed well
  • Let this batter rest for 5 minutes and then heat the skillet
  • Grease it well and then scoop a ladle full of the pancake batter on the skillet
  • Let it cook for 2-3 minutes. When you see bubbles appearing on the surface, flip and cook again for couple minutes
  • Remove the healthy wheat flour pancakes on a plate and serve it fresh and warm with toppings of your choice. Enjoy!

Notes

  • If you want to leave to protein powder out of the recipe, you may
  • You can also add some vanilla essence to the pancake batter 
  • To make this dairy free use almond milk
  • To make the recipe gluten free, substitute wheat flour with almond flour or oats flour
  • tbsp - tablespoon
