I truly can’t emphasise enough how big of a fan I am of banana breads. For that matter, even banana cupcakes and/or muffins. I simply love the flavour, fragrance and the moisture overripe bananas impart to these bakes. And that is why, you will always find at least one them in my home. In fact, I always buy extra bananas, so that I can let some brown, because they are the best for these bakes. And this time it so happened that, I also had some blueberries lying around in my fridge. As a result, these delectable and healthy banana blueberry cupcakes happened! Not only are these moist and absolutely delicious, they even are refined sugar free. Additionally, I have made them with whole wheat flour too. What’s not to love about them?

Also, since I have used over ripe bananas for my cup cake recipe, even that acts as a sweetener. So, essentially, the amount of actual sweetener, maple syrup in this case, requires is also lower. However, you can always alter that as per your taste. In case you wish your bakes to be sweeter, you can increase the amount of maple syrup/honey that you will add. And if you like it less sweet, you can reduce the amount of the same. Furthermore, the addition of blueberries not only make the cupcakes visually more appealing, but enhances their taste too. The not so sweet and sometimes tart berries, punctuate the otherwise sweet banana flavour. And that combination of sweet and tart, is indeed enjoyable. While I have used fresh berries in my recipe, even the frozen ones work just fine.

Easy recipe

Did I mention how easy this recipe is? Oh, it is very easy. You simply will need to mix all ingredients together and bake! that is all. Therefore, if you have children, who like to cook and bake alongside you, then this is one great activity to involve them in. Similar to a one pot meal, I’d like calling these healthy banana blueberry cupcakes a “one pot bake.” I don’t know if such a term exists, but you get the drift, right? This banana cake, tastes the best warm and fresh. Nonetheless, they can be stored in air tight jars and enjoyed for 3-4 more days. Thereafter, you will have to keep it in the refrigerator. Since I haven’t tried freezing them, I wouldn’t be able to tell you if they freeze well. But, in case you try it out, let me know too.  🙂

Maybe because, in my house, these cakes get over really in no time, that is why probably I haven’t got a chance to freeze them! Besides, like I mentioned they are so easy to bake, I am happy to readily bake another batch, if I still have bananas with me.

These cupcakes are very handy. You can have them for breakfast, for your mid-morning or mid-afternoon snack and of course, with tea and/or coffee. And they are loved by children and adults, alike. Healthy banana blueberry cup cakes

Healthy, refined sugar free, yummy , moist banana cup cakes, deliciously punctuated with tart blueberries. A great option for breakfast, snack or simply a guilt free indulgence!

Equipment

  • Oven

Ingredients
  

  • 1 cup whole wheat flour sifted
  • 1 large egg
  • 2 medium over ripe bananas
  • 1 cup blueberries fresh or frozen
  • ½ cup olive oil
  • ½ cup maple syrup or honey
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Instructions
 

  • Using a fork mash the bananas completely
  • In a mixing bowl, add the flour, the salt, the baking powder and soda. Mix well
  • In another bowl, add the mashed bananas, oil, maple syrup and egg. Using an electric whisk or even hand whisk, mix everything until well combined and light
  • Next add the flour mixture and whisk again, until nothing looks dry
  • Then gently fold in the blueberries. Save some to add them on top
  • Pour this mixture (using an ice cream scoop if you have) into cupcake wrappers lined muffin tray,* until ¾th full
  • Tap a few times to remove any air bubbles. Add the remaining berries on top and bake these in a preheated oven at 180° C for 40-50 minutes or until a skewer inserted in the centre of the cakes comes out clean
  • Serve your yummy and healthy banana blueberry muffins fresh and warm. Enjoy!

Notes

  • *Make sure you add the same amount of cake batter into each cupcake wrapper
  • I was able to make 14 cup cakes with these quantities
