An under 15 minutes breakfast recipe of boiled eggs, some crisp veggies and bread that you would love to start your mornings with!
This easy and yummy boiled egg sandwich recipe is your rescue on days you are wondering what to make for breakfast. Not only will you be able to put this together in under 15 minutes – including boiling the eggs – but also love every bite of it. Moreover, you can make this egg sandwich with any kind of bread that you have on hand. From regular sandwich breads to bagels to dinner rolls, all work wonderfully well. Also, while I love hard boiled eggs in mine, these sandwiches taste yum even with gooey centered, soft boiled eggs. In fact, the latter is what the Mr. prefers so I make both the types, whenever I am making these.
To up the goodness quotient of my boiled egg sandwiches I also love stuffing in some fresh vegetables and salad leaves. While shallots and capsicums are a regular feature, salad leaves make their presence felt whenever I have them. However, you may choose to add in more or even leave them out completely in your sandwiches. Besides being a terrific brekkie, these sandwiches are also a great tea/coffee time snack. I love serving them alongside some potato crisps – a la Mumbai style – when doing so.
Since these egg sandwiches have fresh vegetables and ketchup, mayonnaise spread on the bread, they won’t taste great when packed in a tiffin box. The moisture of the vegetables and sauces will make the bread soggy. Nonetheless, the will make for a fantastic after school snack – something that children will absolutely relish.

Besides being a quick, easy and yummy breakfast recipe, yet another beauty of these sandwiches are that you can make them in your style. For example, instead of cutting the eggs in roundels, like I have, you can chop or even mash them up. Then, instead of mayonnaise or ketchup, you could use some coriander-mint chutney on the breads too. No matter which variation you try, I am sure that you will love it. Boiled egg sandwich for breakfast
Ingredients
- 1 hard/soft boiled egg
- 1 burger bun
- ¼ onion sliced
- ¼ capsicum sliced
- ¼ tomato sliced
- ¼ cup salad leaves
- 1 tbsp ketchup
- 1 tbsp mayonnaise
- 1 tbsp mustard sauce
- 1-2 tbsp crushed black pepper powder
- ¼ tsp salt
Instructions
- Peel the eggs and cut them in roundels and keep aside
- Slice the burger bun in half and apply the ketchup, mayo and mustard sauce in the lower half of the bun
- Layer it with fresh salad leaves and the chopped eggs. Top it up with the onions, capsicum and tomatoes. Season with salt and freshly cracked black pepper
- Place the other half of the bun and insert a cocktail stick to secure your sandwich. Enjoy it as is or with a piping hot cup if tea/coffee
