A savory, yummy and healthy take on the classic French toast recipe, my zero oil baked masala toasts are an excellent breakfast recipe that tastes amazing with green chutney and ketchup, on the side
Nothing beats hot and fresh breakfast/brunch for us. And if it is quick, easy and has eggs in it, then even better! That’s why my baked masala French toast recipe is one of our all time favorites. Actually, this recipe is a baked version of the very popular masala French toast recipe, which is a desi version of the classic breakfast. Unlike the French version, our Indian ones are savory and best enjoyed with ketchup on the side. While these are generally fried in butter/oil, I more often bake them, that too without oil or butter. This method takes me lesser time to cook them, as well, compared with frying them. Once you’ve made this baked version, these deliciously healthy toasts are going to become your new favourite breakfast. It’s quick, easy, loaded with vegetables and very yummy!
This recipe is a great way to incorporate lot of veggies in your breakfast. I, especially, love adding baby spinach, capsicum, onions and tomatoes to mine. Along with these, I also add fresh chilis for heat and coriander for freshness. But when it comes to spice, minimum is the key, to let the flavors of the vegetables with the eggs, shine. That’s why, it is only salt and freshly cracked black pepper that does the magic, for me. However, if you wish, you could add chilli flakes, dried Italian herbs etc, too. Additionally, my baked masala French toast recipe also has a dash of milk in it. This not only makes it richer, but also makes the toasts melt-in-the-mouth soft.

These wonderful and healthy toasts taste best when served hot and fresh out of the oven. We love having our masala French toasts dipped in a spicy coriander chutney and ketchup too. And a cup of freshly brewed chai is a must along side it. When making it for children, leave out the chilis and pepper from the recipe and serve only with ketchup. While, I have used wholemeal bread slices for my recipe, feel free to choose any bread of your choice. In fact, even pav (Indian dinner rolls) are a great option here. Therefore, you can customize this wonderful recipe your way and enjoy it with your loved ones.

Baked masala French toast
Equipment

Ingredients
- 4-5 bread slices
- ¼ cup milk
- ¼ cup baby spinach chopped
- ¼ cup onions chopped
- ¼ cup capsicum chopped
- ¼ cup tomatoes chopped
- 2-3 chilis chopped
- 3-4 tbsp coriander leaves chopped
- 2-3 tbsp black pepper crushed
- salt to taste
Instructions
- Whisk the eggs with the salt, pepper and milk until everything is well incorporated. Add in all the vegetables and mix well once again
- Arrange the bread slices in an oven safe dish, in a single layer. Pour the egg mixture over them and spread it out evenly over the slices
- Bake in a pre-heated oven for 12-15 minutes, at 180°C, until. Remove the masala French toasts from the oven and serve immediately with ketchup and green chutney. Enjoy!
Notes
- You can add any vegetables to your toasts that you wish
- Leave the chilis and pepper out when making for children
- 1 cup = 250 millilitres
