A seasonal recipe, these green garlic parathas are easy to make, taste wonderful and make for an amazing breakfast recipe. Pair them with achaar and yoghurt along with chai and enjoy a delicious winter morning meal!
Since we aren’t traveling to India this winter, given that we are expecting and due next month, I have been whipping up winter recipes like never before! Unlike the previous years where we would eat these seasonal recipes back home, this time I am giving them a go. So, here is another recipe that I made with the winter produce of green garlic, my green garlic paratha. Not only are these flatbreads vibrant looking, but they taste really yum too. They are garlicky and herby, both at the same time. That’s because I have added garlic cloves and fresh coriander besides the green garlic, to make these parathas. Therefore you can imagine what a lovely, fragrant, flavor profile these garlic parathas have. Moreover, since they are made with wholewheat flour, they make for a pretty wholesome meal, as well.
All that you need with them is some pickle, masala dahi and a cup of chai! Also, these green garlic parathas are great as breakfast, lunch, dinner and even in lunch boxes. Now, you can make these yummy flatbreads using both fresh and frozen green garlic. In fact, the ones I have made here are using the frozen ones. If you too decide to use the latter, make sure you thaw it before you proceed to make the parathas. Quick, easy, yummy and healthy – what more do we need for our meals?

Green garlic paratha
Equipment
- Tawa (Indian skillet) or any skillet
Ingredients
- 1.5 cups whole wheat flour
- 1 cup coriander leaves roughly chopped
- 1 cup green garlic (fresh/frozen) roughly chopped
- 2-3 cloves garlic
- 1-2 chilis roughly chopped
- ½ tsp cumin seeds
- 2 tbsp oil + more for cooking
- 1 tsp salt
Instructions
- Make a fine paste of the coriander leaves, garlic, chilis, cumin seeds using as little water as required
- To the flour, add the coriander garlic paste and salt - mix well to form a soft dough - you may not need any water to knead the dough. Apply the oil, cover and set aside for 15 minutes
- Divide the dough into 10 balls and roll them out into thin discs. Heat a griddle and place a paratha on it. Cook both sides until brown spots appear on them
- Smear a tablespoon of oil on each side, cook for another minutes and remove from heat. Serve your healthy and yummy green garlic parathas with achaar and yogurt for a hearty meal. Enjoy!

- You can use ghee for cooking the parathas instead of the oil
