You know summers are have arrived when there are watermelons and mangoes available! While mangoes are available all year round in London, nothing beats the Indian ones. And those arrive only in the summer, and how we wait the whole year for the king of fruits. Just because I am raving about mangoes, doesn’t mean I love watermelons any less. In fact, through the summer you will find me chomping on it all day. I can have it a big yummy bowl of a watermelon salad for my main meal, even. Therefore I am sharing with you one of my ever favourites, the watermelon, cucumber and peanuts salad. This one is refreshingly delicious and truly represents summer in a bowl. With all those colours and fresh flavours, even the ones who a salad haters, will join you for this!

I love adding mangoes and roasted peanuts also to this salad. Not only do their contrasting textures make a delicious difference, but their flavours also complement the watermelons pretty well. And as far as the dressing for this goes, it is really basic yet yummy. I have flavoured my salad with honey, lime juice, olive oil and chilli flakes. Additionally, there’s mint and coriander too in there, lending their lovely freshness.

The salad dressing

While I have kept my watermelon, cucumber and peanuts salad dressing rather basic, you could get more creative. If you like, you could grate in a clove of garlic, add some soy sauce or rice vinegar too. On the other hand, even if you keep it to simply some pink salt and crushed black pepper, this is still going to taste fantastic. That is the magic of there amazing seasonal fruits. And if you are someone like me who enjoys a hearty bowl of fruits, you must try this recipe. This is a great summer recipe, because it is going to fill you up and also still keep you feeling light.

Another amazing thing about this salad is that, it doubles up as a snack too. Make a big batch and keep it in the fridge to chill. Simultaneously, whisk together the dressing ingredients and keep it aside too. And mix these two together right before serving. This one is a something that people of all age groups love. Crunchy juicy watermelons and cucumbers along with yummy, sweet mangoes! What’s not to love.

Watermelon, cucumber and peanuts salad

Ingredients
  

  • 2 cups watermelon melon balls or cut into cubes
  • 1 cup cucumbers cut in quarters
  • 1 cup ripe mango cut in cubes
  • ¼ cup roasted peanuts crushed
  • 3-4 tbsp lime juice
  • 2 tbsp honey
  • 1 tsp red chilli flakes optional
  • 2 tbsp coriander leaves
  • 2 tbsp mint leaves
  • 1 tsp pink salt or to taste

Instructions
 

  • Mix together the lime juice, salt, chili flakes and honey, in a small jar/bowl. Keep it aside
  • Place the cut fruits in a mixing bowl, add in the mint and coriander leaves and pour over the dressing
  • Mix well but gently. Finally, garnish with the roasted peanuts
  • Serve your refreshing watermelon, cucumber and peanuts salad as is or chilled. Enjoy!

Notes

  • If serving a later point, drain the excess liquid and then serve
  • 1 cup = 250 millilitres
  • tsp - teaspoon
  • tbsp - tablespoon
