So, that definitely has saved me some more time. However, you could also use the homemade ones.
The topping that I’ve made is of scrambled paneer or Indian cottage cheese. It is melt-in-the-mouth soft and delicious. Also, this bhurji recipe is a quick one. Hence, you indeed can whip this fusion pizza recipe up for a yum Sunday brunch. And it is going to be a delectable experience for pizza lovers for sure! Additionally, you can save this paneer recipe to pair it as a side dish with rotis too.

To up the flavours going in, I have also sprinkled some podi masala before topping up the base with the bhurji. So, if you too have it readily available, you could do the same.
You won’t really need a chutney or a dipping sauce for these uttapam pizzas. The paneer bhurji isn’t very dry and so it helps keep the uttapams moist. Moreover, it is incredible tasty so, just cut the disc up in pizza slices and serve!

Uttapam paneer bhurji pizza
Equipment
- Shallow cooking pot
- Tawa (Indian skillet) or any skillet
Ingredients
For the paneer bhurji
- 2 cups paneer grated
- 1 small onion finely chopped
- 1 cup mixed peppers finely chopped
- 3-4 green chilis finely chopped (avoid when making for kids)
- 2 medium tomatoes finely chopped
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp cumin seeds
- 1 tbsp coriander powder
- 1 tsp garam masala
- 1 tsp chili powder
- ½ tsp turmeric powder
- 2 tbsp coriander leaves finely chopped
- 1 tbsp oil
- 1 tsp sugar
- salt to taste
For the uttapam pizza base
- 6-7 cups dosa batter
- 5-6 tbsp podi masala
- 3-4 tbsp oil
- 3-4 tbsp chili flakes
- shredded mozzarella to taste
Instructions
To make the paneer bhurji
- Heat the oil and add the cumin seeds
- Once it is well roasted add in the onions
- Cook until they turn pink and translucent and then go in the chilis, ginger and garlic pastes
- When their raw smell goes off put the tomatoes in. Also add in the sugar and salt
- Let them turn mushy and then add all the spice powders
- Once the oil separates, add the peppers. Mix well and cover and cook for 5 minutes
- Now add the grated paneer and mix well. Again cover and cook for another 5-7 minutes and garnish with chopped coriander. Set aside
To make the uttapam pizzas
- Over a medium low flame, add two ladles of the dosa batter
- When you see bubbles on the surface, sprinkle some oil around the uttapam. Drizzle some podi masala and spoon over 2-3 tablespoons of the bhurji
- Add the shredded mozzarella and some chili flakes. Cover and cook until the cheese melts
- Serve the uttapam paneer bhurji pizzas hot, just off the tawa and enjoy!
Notes
- Adding the chili flakes is to your taste
- The sugar is added to compensate for the tanginess of the tomatoes. You could leave it out if you so wish
