This super easy and healthy whole orange loaf cake recipe is going to be the easiest and yummiest fruit flavored cake you’ve made. Made with whole oranges, this is a yummy snack and tastes great with tea and coffee too

Loaf cakes are so handy! And I love serving these with tea and/or coffee to friends and family. Also, I sometimes just cling wrap one and carry it on my way to run an errand that could take time. However, I know a lot of times you may think baking is tedious. But what if I told you this is a super easy, quick and healthy loaf cake recipe where you will only need to blend away everything? That is what my super easy and healthy whole orange loaf cake is all about. Yes, you heard me right! For my orange loaf cake I have used whole oranges, which means there is no zesting or squeezing it out for the juice, needed – so convenient! More importantly, using whole oranges ensures you get all the fibers and goodness of the fruit versus using only its juice.

So in this yummy whole orange cake recipe you are going to be blending the oranges, eggs and your sweetener together and then adding it to the flour. So simple and so easy. This cake is one of our favorite tea time snacks and I have gifted these to my friends and family as well. Everybody who’s had this cake has fallen in love with it. So, you too should definitely try this one out, soon. Now, if you don’t have a loaf tin, you could bake your orange cake in a regular cake tin too. I have tried it both ways and keep alternating between these shapes as and when I please. 🙂

Super healthy

To up the health meter for my super easy and healthy whole orange loaf cake, I have used whole wheat flour and not plain flour. Also, I have replaced refined sugar with maple syrup and butter with olive oil. But, the taste, texture and flavors of the cake remain unadulterated, moist and fragrant. When you bake this, you will know that healthy also is yummy. This super easy loaf cake recipe is a must try if you like fruit cakes. And it is a perfect treat for your tea-time break. And if you don’t like fruit cakes, then this is a bake you definitely should give a shot at. Because, you might want to re-consider your choice after tasting this one.

Super easy & healthy whole orange loaf cake

Equipment

  • Oven

Ingredients
  

  • 250 g whole wheat flour
  • 2 seedless whole oranges diced
  • 3 large eggs
  • 70 ml olive oil
  • 100 ml maple syrup/ honey/ light brown sugar
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt

Instructions
 

  • In a blender or mixer, blend together the diced oranges, eggs, sugar, olive oil and vanilla essence
  • In another bowl, sift the flour with the salt, baking powder and soda
  • Add the dry ingredients to the wet one, gradually, and whisk until the flour doesn't look dry. Do not over mix
  • Line a greased loaf tin with baking paper and pour in the orange cake mix. Tap it once or twice to release air bubbles and then drizzle the pumpkin seeds over, if using
  • Bake in a pre-heated oven for 50 minutes at 180°C or until fully cooked
  • De-mould after 5 minutes and let it cool over a wire rack

Notes

  • You could also add nuts, pumpkin seeds, dried cranberries, chocolate chips etc to your orange cake too 
  • The cake tastes best when fresh. However, refrigerate when more than two days old to prevent it from spoiling

    Hi there, would I be able to substitute the oranges for kumquats? I have an abundance at the moment and would love to use them up with something like this!
