Butter & sugar free banana bread

A lovely moist banana bread with ripe bananas and whole wheat flour, olive oil and honey instead of refined flour, sugar and butter. Healthy and yummy!

Oh I love baking my own banana breads! And the best part is the aroma of the bananas, cinnamon and eggs filling the whole house while baking it!! Moreover, my recipe here is a healthy take on the classic version. It is refined sugar free, so the sweetness that the bread derives is, majorly, from the ripened and browned bananas. Also, to up the health quotient, I have substituted butter with olive oil and refined flour with whole wheat flour. And that, my friends, is my butter and sugar free banana bread, for you.

I know the feeling when you want to have something sweet without feeling too guilty about it!

So full of health

Do you know those over ripe, brown bananas (yeah the ones that don’t look good!) are rich in antioxidants. This basically means they help prevent and delay cell damage in the body. Isn’t that amazing? Besides this, this amazing fruit is loaded with health benefits.Ā And those are what goes into my delicious butter and sugar free banana bread. I also like toĀ  play around with the additional ingredients with this bake. I sometimes add blueberries, chocolate chips, nuts etc or make one with just bananas. However, for this recipe I have kept it just as is. But you could go ahead and add whatever you like.

Now, this doesn’t require a long time prepping, but while my banana bread is baking I feel time just doesn’t pass (even though it takes only under an hour)! This is because, within 15-20 minutes of baking, my kitchen starts smelling so so good that I just want to pop open the oven and grab some of the deliciousness!

I enjoy this bread with my regular cup of of chai. Nonetheless, you could have a slice for breakfast too or anytime you feel like. After all, this one indulgence is totally guilt free. So, you too follow this simple recipe, get baking. Lather that guilt-free banana bread with butter and/or Nutella and enjoy with a nice, hot cuppa tea!

Butter and sugar free banana bread

Equipment

Ingredients
  

  • 2 cups wheat flour sifted
  • 2 medium eggs
  • 1 cup olive oil
  • ½ cup honey
  • 2 big browned and ripened bananas mashed
  • 2 tsp cinnamon powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions
 

  • In a bowl, mix all dry ingredients - the flour, cinnamon powder, salt, baking powder and soda
  • In a separate bowl, using a hand blender, combine the mashed bananas well with the oilĀ and honey
  • Add the eggs into this and beat well until light and fluffy
  • Now, gradually add the dry ingredients in the wet one and whisk the mixture until the batter comes together and nothing looks dry
  • Line a greased (with oil) loaf tin with baking paper and pour the banana bread batter into it
  • Tap it a couple times to release any air bubbles 
  • Bake in a pre-heated oven at 180° C for 50 minutes (but do check once 40 minutes are up*)
  • Remove, let it cool for 5 minutes and then transfer it on to a wire rack until completely cooled
  • Enjoy your butter and sugar free banana bread just as is or with a hot cup of chai. Enjoy!

Notes

  • *To check for the doneness of the bread, insert a skewer in its center. If it come out clean then the bread is well baked, if not bake for another 10 minutesĀ 
  • Use well ripened and browned bananas for the bread for a more enhanced taste
  • You could also use chocolate chips, nuts, raisins and/or dried fruits like cranberries etc.
  • You can increase the amount of honey/maple syrup if you wish the bread to be sweeter
