A delicious, quick, easy and Indian take on pasta. This is a pantry and freezer friendly ingredients recipe that will get done under 20 minutes!
On my last visit to India I has this very delicious “Indianised” pasta. By that I mean, the sauces the pasta was cooked in had Indian flavors in it. It was spicy and definitely yummy. And the moment I’d eaten it I knew that I’d recreate it when back in London. So, here it is, my spicy masala pasta or an Indian style pasta recipe. Not only is this very delicious, but it also is an under 30 minute recipe. Furthermore, instead of using fresh vegetables for this recipe, I have used frozen ones. Which means, there is hardly any cutting chopping to do here, which saves more time. Therefore, this is a perfect weekday meal or a snack! While I have made a vegetarian pasta here, you could add cooked prawns, chicken, tofu or even paneer.
So, in a lot of ways this is a pantry and freezer pasta recipe. This recipe is a complete life-saver I am telling you. You can satiate your pasta cravings in no time with this one. Especially when you are busy or need a quick snack. And the pasta sauce that I’ve made here is really a super convenient one, too. It basically is tomatoes ground with chilis. Therefore, everything about this pasta is easy and yummy! And this spicy masala pasta is a great hit among kids and adults both.

Quick and easy
For this quick and easy spicy masala pasta, the ginger garlic paste is the only crucial ingredient. This is the main flavouring agent in this recipe. Besides the sauces, a good or freshly made ginger garlic paste makes a huge difference to the taste of this pasta. So, make sure to use a good brand or crush some at home. Apart from this, you can tweak the recipe to your taste, in terms of the veggies you want to add. In fact, like I said earlier, you could even add a protein of your choice – such a flexible recipe this indeed is! To make your meal even more special you can pair this delicious and quick meal with a few slices of garlic bread.

Spicy masala pasta
Equipment
- Shallow cooking pot
Ingredients
- 2 cups pasta
- 1 cup frozen mixed vegetables
- 1 medium onion sliced
- 1 large tomato roughly chopped
- 1 chilli roughly chopped
- 1 tbsp ginger garlic paste
- 1 tbsp garam masala
- 1 tsp coriander powder
- 1 tsp chilli powder
- 1 tbsp olive oil
- salt to taste
For garnishing
- 1 tsp red chilli flakes optional
- 1 tbsp coriander leaves finely chopped
- 2-3 tbsp parmesan/mozzarella cheese grated
- 6-7 fresh basil leaves optional
Instructions
- Cook the pasta as per your packet instruction or until 90% done. Drain and set aside. Reserve 1 cup of the pasta water for later use
- Grind the tomato with the chilis to a smooth paste and keep aside
- Heat the oil and add the cumin seeds. Saute´ for couple minutes and then add the onions and cook until they soften. Then add the ginger garlic paste and cook for couple minutes
- Next tip in the ground tomato and chilis, mix well. Add all the spice powders and salt, mix and cook until the oil separates
- Add the vegetables, mix and add ¼ cup of the pasta water. Lower the flame, mix well and then add the cooked pasta. Mix until the pasta, veggies and sauces are mixed well
- Remove from flame, add chilli flakes, cheese and chopped coriander and mix well. Serve the spicy masala pasta garnished with fresh basil leaves. Enjoy!
Notes
- Instead of frozen vegetables you can also add fresh, boiled vegetables
- You can also add boiled and shredded chicken, paneer, tofu etc to the pasta
