I have more of idli recipes on my blog than that of dosas! This, however, is not because we don’t love these savory Indian crepes but because, it’s taken me a while to master the art of making them. Maa makes them thin and crisp and that’s the goal I have been wanting to achieve. And now when I have finally got them right, here is one of our favorites, the spicy egg dosa. This dosa is a street food speciality in south India. In this recipe, the rice and lentil crepe has a layer of egg, making them delicious and wholesome. What’s more, these egg dosas are really easy to make and that too with a handful of ingredients. Therefore, making them perfect to make on a lazy weekend morning. Alternately, you could make the egg dosa to celebrate a special occasion too. After all, we make the normal ones almost always, so this one is special.
While I love having them just as is without any accompaniments, you could always pair them with a chutney of your choice. The husband loves a side of my peanut chutney with his share of these crepes. However, a cup of the aromatic south Indian filter coffee is a must for both us with our dosa breakfast. This egg dosa recipe is something that I promise both kids and adults will love. When making for children, you could leave out the chilis and the chili powder. In fact, you could also grate some cheese over the layer of eggs for them and serve them with ketchup. The cheese would only make the dosas more yummy, so you could do that for the grown ups as well! 🙂

The dosa batter
Like I have mentioned in my earlier blog posts, I haven’t been very successful in fermenting my own idli/dosa batter, that still remains the case. However, fortunately, for me my Indian grocer, sells fresh batter, which is what I have used here as well. So, you could do that as well if you can find someone who makes and sells the rice and lentil batter. On the other hand if you ferment your own dosa batter, then absolutely nothing like it. The batter, eggs and a few basic vegetables is all you need to make your egg dosa. Easy and yummy, that is what these wonderful dosas are all about. I learnt this recipe from my friend, who had made it for us when we were staying with them. And it was love at first bite for us!
I have made these dosas multiple times ever since we had them at my friend’s and it truly is one of our favorite weekend breakfasts/brunch. It is not only tasty but filling and healthy, as well. Spicy egg dosa
Equipment
- Tawa (Indian skillet) or any skillet
Ingredients
- 2 cups dosa batter
- 4 eggs
- ½ cup onions finely chopped
- ÂĽ cup coriander leaves finely chopped
- 2-3 fresh chilis finely chopped
- 2-3 tbsp meerkut/chili powder
- 4-5 tbsp oil
- salt to taste
Instructions
- Beat an egg with some salt and set aside
- Heat the skillet, sprinkle some water over and lower the flame. Wipe the water off and place a ladle full of the dosa batter in the centre. Moving from the centre, spread it in circular motion, outwards
- Let it cook over medium heat for a minute and then pour over the beaten egg. Gently spread it on the dosa using a spatula. Sprinkle a teaspoon of the chili powder, some onions, chilis and coriander leaves
- Cook for 3-4 minutes. Pour a tablespoon of oil around the dosa and also in the centre of it. Insert your spatula under it and flip the dosa. Press it down on the skillet and cook for another minute and remove from heat. Follow the same process for the remaining batter and eggs
- Serve your egg dosas fresh off the skillet with chutney and a cup of coffee for a yummy, fulfilling breakfast/brunch. Enjoy!
Notes
- You can add capsicum and tomatoes as well along with the onionsÂ
- When making for children, leave out the chili/chili powder. You can also grate in some cheese when making it for them
- The dosas can be served with ketchup too
