Hello lovely people, here is a Thai recipe for you that I absolutely love. It is one of my go to weekday meals as well, the Thai basil chicken. This one pot chicken recipe is flavoured simply, so as to maximize the fragrance of the fresh basil leaves. While traditionally, Thai basil is used, I have used sweet Italian basil here for two reasons. First, I couldn’t lay my hands on the Thai ones and second, these basil leaves that I’ve used here are homegrown! So, this amazing basil chicken recipe is really special to me. After all, cooking with homegrown produce is a different joy altogether! Coming back to the recipe, this one is also an under 30 minute recipe. Doesn’t this just make the whole deal even better? Moreover, the beauty of this chicken recipe is that, you could have it as an appetizer too.

Instead of keeping it saucy, you could keep it dry. And what you will then have is, a fragrant and delicious party appetizer. Besides the basil leaves, all you will need is some garlic and some sauces, that’s all. One of the main sauces that you will need is either oyster or hoisin sauce. These sauces impart a sweet as well as umami flavor to the Thai basil chicken, making it taste yum. The others that you will need are some fish sauce and soy sauce. I tend to have these with me in my fridge as I make noodles or stir fries quite often. However, if you don’t readily have them, you could buy them from your supermarket. All these sauces are pretty easily available.

Weekday meal option

I have used boneless chicken thighs to make this delicious stir fry recipe. I am calling it a stir fry because, it is actually that quick to make. The chicken thighs, cut into small chunks, make this recipe juicy and also helps in cooking faster. However, you could opt to use chicken breast here, if that’s what you prefer. Also, if you wish you could add in some vegetables that you like in your Thai basil chicken. When I made this for our dinner last evening, I only had spring onions with me, so that’s what I added. But you could add bok choi, pok choi, cabbage, mushrooms etc if you like. But, no matter what you choose to add, make sure you are using a lot of basil leaves in here! The amount should be almost as good as another vegetable that you use for your recipe.

The basil leaves will completely wilt once you add them to the hot pan, so make sure to use a sizable quantity to get the maximum taste from them. In truth, it is their flavor that should shine through your Thai chicken recipe more than any other ingredient. Equipment

  • Shallow cooking pot

Ingredients
  

  • 500 g boneless chicken thighs chopped
  • 3 tbsp oyster or hoisin sauce
  • 3 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 2 tbsp fish sauce
  • ¼ cup onion sliced
  • 1 tbsp garlic chopped
  • 2-3 fresh chillis sliced
  • 4-5 stalks spring onion chopped
  • 1 cup fresh basil leaves
  • 1 tsp cornflour
  • 2-3 tbsp chilli oil or any cooking oil
  • salt to taste

Instructions
 

  • In a small bowl, mix the sauces with the cornflour and keep it aside
  • Over medium high flame, heat the cooking pot (or wok) with the oil and add in the chilis and garlic. When fragrant, add the onions and spring onion whites and cook for 3-4 minutes
  • Push these to a side of the wok and add the chicken pieces, in a single layer. Let it stay like this for a couple minutes and then mix with the onions and garlic
  • Add the spring onion greens and stir through. Add in the sauce mixture and cook until the chicken is fully done. Check for salt and add if needed (all the sauces used above have salt in them)
  • Add the basil leaves, mix well and remove from frame. Serve your delicious Thai basil chicken with steamed rice or just as is. Enjoy!

Notes

  • You could also use ground chicken for this recipe
  • If you can find Thai basil leaves, do use them in the recipe. I have used my homegrown sweet basil here, which also works well
  • 1 cup - 250 milliltres
  • tbsp - tablespoon
  • tsp - teaspoon
