A super simple yet delicious recipe of semolina ladoos, with coconut and dried fruits that are melt in the mouth – a delicious festive treat!

Diwali – the Hindu festival of lights is knocking on the door. And, like it has always been a tradition at my mum’s place, I too have started with my sweets preparation for it. These rava and coconut ladoos are my most favourite, from the lot of sweets she made. Hence, it is no wonder that this recipe is the first among, Diwali foods, that I am sharing. Not only are these ladoos delicious, but also super easy to make too. Moreover, this is a quick recipe. And by that I mean, you are going to be able to make them in under 30 minutes. Fabulous right?

In Mumbai, it is a ritual during the festival to meet and greet friends and family. Gifts and festive foods are exchanged. And all this is so much fun, amongst the beautiful decorations. Diyas are lit, fairy lights are hung on windows and doors, rangolis are made and of course food is relished. So, while I do not make rangolis here, I do all the rest. And these rava ladoos are for my family and friends here, in London. 🙂

Coming back to my melt-in-the-mouth rava and coconut ladoos. While there are loads of ways of making them, I am sharing with you the simplest. This I have learnt from maa, who in turn learnt from hers. And in fact, it was my nani who made the sweets every Diwali. Hence, the tradition. So, for these laddoos you wont need to make any sugar syrup. In my recipe, I have made a dough of the roasted semolina and desiccated coconut mixture, with milk. And this is when combined with the ghee helps give the ladoos their shape. And this method is much easier than making a sugar syrup and adding the roasted sooji in it.

Full of flavours

I have flavoured these treats with cardamom powder and have also added loads of mixed nuts too. The aromatic rava (sooji) when combined with the goodness of ghee, coconut and nuts is pure bliss. Rava ladoo with coconut

Equipment

  • Shallow cooking pot

Ingredients
  

  • 1 cup rava/sooji semolina
  • ¼ cup desiccated coconut
  • 7-8 tbsp milk warm
  • ½ cup castor sugar
  • 2 tbsp ghee
  • 1 tsp cardamom powder
  • 3-4 tbsp mixed nuts (almonds, pistachios, cashews) chopped
  • 8-9 raisins

Instructions
 

  • Heat a shallow cooking pot and add the ghee. Fry the nuts and raisins until golden brown, remove and keep aside. Next add the rava and roast it, on a medium low flame, until you get a nutty aroma

  • Then add the coconut and roast for another 5-7 minutes

  • Remove in a separate bowl and once it comes to room temperature, add the nuts and the cardamom powder. Mix well

  • Next add the sugar and mix until homogenous

  • Now, add the milk, tablespoon by tablespoon to the rava-coconut mixture until it starts holding shape. Shape them into ladoos and stick a raisin on top

  • Let the rava ladoos with coconut rest for 15 minutes before eating, so that their shapes firm up. Enjoy with friends and family!

Notes

  • You can adjust the amount of sugar to be added as per taste
  • Add the milk gradually so that you know when to stop adding, once the mixture sort of forms a dough enough to start shaping the ladoos
  • 1 cup = 250 milliliters
  • tbsp - tablespoon
  • tsp - teaspoon
