A yummy banana muffin made with whole wheat flour and without refined sugar along with the deliciousness of Nutella – makes for an amazing accompaniment with your coffee/tea/milk

I love banana flavoured bakes. And these Nutella swirl banana muffins, definitely put a seal on that fact. Since these follow my banana blueberry muffins, chocolate banana muffins and my classic banana bread. Every time we buy the fruit on our grocery run, I make sure to pick up a couple extra – so that I can bake with them too. Furthermore, I’ve baked my Nutella banana muffins with wholewheat flour and without refined sugar, too. Therefore, making them a guilt free indulgence – except for a tablespoon of Nutella on each of them. 😉 Not only do we enjoy these with our chai, but we love them even for our breakfast and/or brunch too. Additionally, they are great as gifts too. Firstly, you can make them really quickly and easily and secondly, everybody I’ve gifted these to has always loved them. And when I say everyone, that includes kids and adults, alike.

Moreover, when I say quick I really mean it. The preparation time for the yummy Nutella swirl banana muffins is only about 15 minutes. And while the baking time is about 30 minutes, once they are in the oven baking, you could finish up other things that you have. I love baking them first thing in the morning on weekends. Both the husband and I, also love the fragrance wafting through the house when these muffins are baking. Also, while in the oven, I finish up making our breakfast, as well. This way we get to enjoy some fresh and warm banana muffins with our  morning tea. The quantities that I have given in my recipe yields 12 muffins, which last us a week. Hence, I usually bake them on a Sunday morning. However, baking these on weekdays is also an option since they are so easy to put together.

Overripe bananas

Like I always say in all my banana bake recipes, using overripe bananas result in the best cakes/muffins. Also, the overripe tend to be more sweeter than their not so brown counterparts. That’s one of the reasons I only use half cup of maple syrup to sweeten my Nutella banana muffins. Also, the dollop of Nutella lends some more sweetness to the muffins. However, you can increase or even lower the amount of the maple syrup, as per your taste. In fact, you could even substitute maple syrup with any other sweetener of your choice. The recipe will still remain the same. Yet another advantage of using well browned bananas is the more enhanced taste of the fruit in your muffins. 🙂

These moist, delicious Nutella swirl banana muffins taste best when consumed fresh. You could store them in an air tight container, at room temperature for two to three days. Thereafter, be sure to refrigerate them. Although, warm it up slightly in your microwave before eating them. That’s how they taste best! Nutella swirl banana muffins

Equipment

  • Oven
  • Muffin tray
  • Cup cake wrappers

Ingredients
  

  • 1 cup wholewheat flour
  • 2 ripe bananas mashed to a smooth paste
  • ½ cup maple syrup or any sweetener of choice
  • ½ cup olive oil
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 12 tbsp Nutella
  • ¼ tsp salt

Instructions
 

  • In a mixing bowl, sift together the flour, salt, baking powder and baking soda. Mix well
  • In another bowl, take the mashed bananas and add in the eggs, oil, maple syrup and vanilla essence. Whisk this mixture very well until well combined and light in consistency. Gradually add the flour mixture and whisk again, until nothing looks dry
  • Line the muffin tray with cup cake wrappers, pour the banana cake batter (using a spoon or an ice cream scoop) until ¾ th full in each cup. Tap the tray a few times to remove any air bubbles

  • Add a tablespoon of Nutella over each of them and swirl them around, gently, using a toothpick. Now, bake in a preheated oven at 180° C for 30 minutes or until a skewer inserted in the centre of the muffins comes out clean

  • Remove from oven and let the muffins sit for 10 minutes. Enjoy your yummy and healthy Nutella swirl banana muffins, with tea, coffee and/or milk

Notes

  • You may adjust the amount of sweetener as per your taste. However, bear in mind that over ripe bananas also tend to be sweet
  • 1 cup = 250 millilitres
  • tbsp - tablespoon
  • tsp - teaspoon
