One of the most popular Mexican food items have got to be tacos. And I love them for so many reasons. They are light yet packed with flavours, colourful and so easy to make. I love making and tacos for friends and family, and let me tell you it is a super hit party food. Especially in the summers. Moreover, the fact, that you can customise as you like, makes it one of my favourite quick and easy appetizers. So, here is a recipe of my most favourite of them all, grilled chicken tacos with mango salsa. Let me share a trivia with you, tacos are supposed to be eaten without utensils. Yes, that’s right! Just pick it up from the serving platter and make a go at it. Now, you see another reason why this is a party appetizer favourite.

Tacos

To give a reference, you could draw parallels with the rolls you get in India to tacos. Difference being, tacos remain open, while your rolls are completely wrapped. That’s how they give you a silver foil or a butter paper wrapped around your roll for the ease of having it. On the other hand, tacos are much smaller. You could say, that they are the size of puris. Hence, no utensils are needed. Like an open face sandwich, tacos could be, very loosely, called open face rolls 🙂 A taco is made out of tortillas,  which are generally made of either wheat or corn. Next, it has a filling of meat or vegetables or seafood, which is then topped off with a salsa and sour cream. And the most common garnishes are avocados, guacamole and chopped veggies.

Grilled chicken tacos with mango salsa

Now, that you have a basic idea of a taco, let me talk to you about my grilled chicken with mango salsa recipe here. I have built my tacos on wheat tortillas, with succulent pan grilled chicken, a supremely flavourful mango salsa and fresh avocados. Also, I have replaced the sour cream with a beautiful and healthy homemade yoghurt dip. All of this put together, make this taco a summer food recipe. Above all, since I have used mangoes, in the form my mango salsa here, these tacos spell summer in bold. I have already, in my earlier post, shared the mango salsa recipe. These grilled chicken tacos with mango salsa are fresh, flavourful, vibrant, crunchy and melt-in-the-mouth all at once.

Quick and easy recipe

While there are four steps to the recipe, all of them are very easy and won’t take up much of your time. Also, all ingredients and spices that I have used are all that are very easily available. Now, let me break the recipe steps down for you. They are:

  • Marinating the chicken and grilling it
  • Making the salsa
  • Making the yoghurt dip
  • Assembling the tacos

And, you could simultaneously work at two steps at a time. I will tell you how in my recipe notes.

I have used store bought tortillas for the tacos. However, you could also use the ready made taco shells. Since, I prefer the soft tortillas for my tacos, that is what I have gone ahead with.  Moreover, you could replace chicken with seafood, tofu, paneer and tweak these grilled chicken tacos with mango salsa to your preference. No matter what protein you use, you can keep the marination the same. Since I have already shared the mango salsa recipe, it is not not written below. Equipment

  • Griddle pan/oven

Ingredients
  

  • 6 tortillas
  • 250 g chicken breasts
  • 2 ripe avocados sliced
  • 1 medium red onion sliced
  • 5 tbsp greek yoghurt or hung curds
  • 2 tbsp fresh coriander leaves chopped
  • 2 tbsp lime juice
  • 2 tsp olive oil
  • sea salt to taste

For marinating the chicken

  • 2 tsp cumin powder
  • 1 tsp red chilli powder
  • 2 tsp lime juice
  • 2 tsp garlic powder
  • 2 tsp white pepper powder
  • 2 tsp oregano
  • 2 tsp chilli olive oil or normal olive oil
  • sea salt to taste

Instructions
 

  • Wash and pat dry chicken breasts. Score them lightly

  • Add all the marination ingredients and massage them well. Set this aside until you go ahead to make the salsa and yoghurt dip

  • Prepare the salsa. Here is the recipe link for the mango salsa

  • For the yoghurt dip, whisk the yoghurt well so that there are no lumps. Add sea salt, lime juice and chopped coriander and mix

  • Return to the chicken. Heat a griddle pan, and add the chicken breasts. Roast for around 7-8 minutes, on each side, until they cook through and get a dark brown colour on them
  • Remove on a plate. Using a knife and fork, slice them an inch thick. Leave it to cool down

  • Remove the tortillas on a plate

  • Using a cookie cutter, cut out circular sheets of 7 centimeters diameter. Very lightly, for 30 seconds on one side, toast them over a pan

Assembling the tacos

  • Spread the tacos on a plate

  • Add the sliced avocados and onions. Drizzle some sea salt and lime juice over them

  • Place the grilled chicken

  • Add the mango salsa

  • Now, gently lift from the sides and keep the tacos close to each other so that they can "stand." Add dollops of the yoghurt dip 
  • Serve your grilled chicken tacos with mango salsa, at room temperature with some refreshing, chilled lemonade or beer. Enjoy!

  • These proportions of ingredients, yielded 12 tacos
  • You could replace chicken with any protein of your choice
  • The marination process will not change
  • You could use sour cream instead of the Greek yoghurt dip
