I am always game for recipes that are easy, quick and delicious. And in my quest of the same, I keep developing new flavours and shorter methods. And one such, one pot recipe is my ginger garlic chicken fry. This is a very simple recipe, that took shape one lazy afternoon using chicken drumsticks. So, you can imagine, how quick to cook, this must also be. On the other hand, it is also an elaborate-cutting-chopping free and relatively healthy chicken recipe. Healthy because, you will need just need a tablespoon of oil to cook this yummy appetiser. So, it is more of a roast, than a fry really. This seems to be be getting only better! 🙂

I love the sweet fragrance of garlic and the natural spice of ginger. And these aromatics are the heroes of this quick-fix chicken meal. And to enhance the flavours, I have used freshly crushed ginger and garlic. Now, while I have used a mortar and pestle for this, you can grind it in a blender too. Besides these, you will only need some basic Indian spices. What’s more, the marination time is minimal, too. Didn’t I say this is a hassle free recipe!

Versatile recipe

You can very well make this flavourful, ginger garlic chicken fry for your weekday dinner too. I, generally, team it up with some fresh, crunchy salad on the side. However, this is also great with Indian flatbreads like rotis and naans. In addition, it can act as an amazing appetizer at your next house party. as well. This chicken fry is a lovely accompaniment with drinks. The spice of the ginger and the frangrance of the garlic makes this a hearty winter evening snack too. Hence, just the perfect time for you to try your hands at this recipe. One recipe and so many ways to enjoy it!

The flavours of this chicken drumstick recipe, are further enhanced with the addition of lime juice and curry leaves. The freshness and the aroma of the curry leaves, take the taste this prep a notch higher.

Ginger garlic chicken fry

Equipment

  • Shallow cooking pot with lid

Ingredients
  

  • 600 g chicken drumsticks make 2-3 slits on each
  • 2 tbsp garlic freshly crushed
  • 2 tbsp ginger freshly crushed
  • 3-4 fresh green chillis slit (optional)
  • 2-3 tbsp lime/lemon juice
  • 2 tbsp kashmiri red chilli powder for colour (optional)
  • 1 tsp garam masala
  • 1 tsp black pepper powder
  • 1/2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 6-7 fresh curry leaves
  • 2-3 tbsp cooking oil
  • salt to taste

Instructions
 

  • Wash the chicken well and pat it dry. Marinate it for 15 minutes with salt, pepper, lime juice, green chilis, ginger, garlic, chili powder and turmeric powder

  • Heat a pan with the oil, add the curry leaves and add the chicken. Sear it on high flame for 6-7 minutes

  • Add the coriander powder, the garam masala and sprinkle some water, to deglaze the pan. Mix well, cover and cook over medium flame until the chicken is completely cooked. However, keep stirring in intervals so that the chicken doesn't burn

  • When cooked, switch the flame off drizzle the lime juice and coriander leaves. Mix and keep covered for two more minutes

  • Remove and serve the ginger garlic chicken fry hot with some fresh salad or Indian breads. Enjoy!

Notes

  • Do give the drumsticks a few slits so that the marinade penetrates well and it cooks faster
  • The kashmiri red chilli powder is for the colour and not heat 
  • Keep sprinkling hot water, time to time, in case the chicken pieces start sticking to the pan
