Nothing like toasts and eggs for breakfast, don’t you agree? It definitely is one of our favorites. And my garlicky avocado toast with egg takes it another level up. Not only is it delicious and wholesome, but also quick to put together, with only a handful ingredients. I love adding fresh, minced or crushed garlic as well to my avocados. It just the makes the toast even better. Moreover, if I have salad leaves in my fridge I love adding a few of those as well. For instance, here I had some baby spinach with me, so I’ve layered those here. They not only add more freshness to the toast but also makes it more fulfilling. That means just this one toast can make you stay full for longer in the day!
I love soft boiled eggs, generally for breakfast so that’s what on my avocado toast, too. But you can eggs cooked to your liking here. Be it fried, poached or boiled, all taste really yummy here. In fact, poached eggs are a very popular choice for avocado toast with egg. So, while you have the eggs and bread cooking on the sides, you can get busy mashing the ripe avocado and seasoning it. And assemble all of it when done. Therefore, this makes for a great weekday breakfast. I keep the flavors very simple. For the avocado I stick to salt, pepper, crushed garlic and lime juice. And once I’ve added the eggs on the toast, just a small hit of sea salt, lots of crushed black pepper and a pinch of chili flakes.

Garlicky avocado toast with egg
Ingredients
- 1 ripe avocado
- 2 eggs boiled and halved
- 1 garlic clove minced
- 1 tbsp lime juice
- 1-2 tbsp black pepper crushed
- 2 slices bread toasted
Instructions
- Slice the avocado in half and remove the pit. Scoop the flesh out in a bowl and add to it the lime juice, salt, garlic and pepper - give it a good mix
- Place the toasts on a plate and layer it with the mashed and flavored avocado, some salad leaves (optional) and the eggs. Season with just a touch of salt and loads of freshly cracked pepper and serve
