Hola everyone, continuing with my summer food recipes, here is a very very healthy one. My garlic and lemon pan grilled chicken is a fresh and zesty summer recipe. Moreover, it is an extremely quick and easy chicken meal too. While I have chosen to pan grill the meat, you could even barbecue or bake them. The main flavours here, are that of crushed garlic and lemon juice. The sweetness that the garlic infuses along with the freshness of lemon juice in this recipe, makes this garlic and lemon pan grilled chicken a delicious treat. Also, the addition of fresh crushed green chillis, that provides a slight hint of heat, rounds up the flavours.

The charred and crusty texture outside and the juicy chicken goodness inside, of this grilled chicken, is a total crowd pleaser. Whenever I have made this for my house parties, right from kids to adults, everyone has enjoyed it. Moreover, this is my go to recipe when I have friends over on a short notice. So, you too should save this recipe and give it a try soon.

Quick and healthy recipe

This is a pretty quick and easy recipe. There is no cutting or chopping of vegetables involved, or much of cooking. And since the chicken is well marinated, the cooking time too, is under 20 minutes. Also, while I have used drumsticks for my garlic and lemon pan grilled chicken recipe, any other cut would also work. However, I would urge you to use chicken on the bone for this one. And not boneless pieces, as the former imparts more flavour to the cooked meat.

Additionally, this one is a very healthy recipe too. You must’ve figured that 🙂 I have used about a tablespoon of olive oil, for the marination and one tablespoon for cooking. So this one is high on taste and pretty low on the calories. Plus, chicken drumsticks are a very good source of protein and amino acids.

This beautifully flavoured grilled chicken, is your perfect accompaniment with a tall glass of lemonade or beer. Lightly flavoured and simply grilled, this is a recipe for the days when you want a light yet filling chicken dinner. Simply, serve these yummy, bursting with flavours, chicken drumsticks with some salad on the side. You could also enjoy these, with some spicy dip too.

Garlic and lemon pan grilled chicken

A yummy, quick, easy and fresh pan grilled chicken recipe

Ingredients
  

  • 500 g chicken drumsticks skinless
  • 6 tbsp lemon juice
  • 2 tsp lemon zest
  • 4 fat garlic pods crushed
  • 3 fresh green chillis crushed (optional)
  • 1/2 tsp Mediterranean spice mix optional
  • 2 tsp sea salt or to taste
  • 1 tbsp chilli olive oil or regular olive oil

Instructions
 

  • Wash the chicken well, pat dry with a kitchen towel and make light gashes on them, using a knife

  • Add a tablespoon of the oil, spice mix (if using) salt, lime juice, crushed garlic and chillis

  • Add the lemon zest and mix everything well. Keep this to marinate for at least an hour

  • Heat a griddle pan and brush some oil on it

  • Add the chicken drumsticks. Cook for 3-4 minutes and then turn them over, using tongs

  • Repeat this process until the chicken has a nice golden brown colour and is cooked completely

  • Remove on a plate and serve hot with salad and/or your choice of dip

Notes

  • Only make light gashes and not deep on the chicken. You do not want the meat to fall off the bone when cooked
  • Adding the spice mix is optional. If you don't have it, you may skip it
  • The chicken needs to marinate for at least an hour 
  • You may use regular salt instead of sea salt
  • I have crushed the garlic and chillis using a mortar and pestle. You could use any grinder, just keep it coarsely ground
  • Heat the griddle pan well before adding the chicken. That way you will be able to get the grill maarks on them
