This creamy garlic butter Tuscan mushroom sauce recipe is a keeper! Not only does it taste amazing but it is also supremely versatile. You could have this creamy mushroom sauce as is or drizzle pasta, noodles, grilled chicken, fish etc. Another of my favorite ways to polish this off is with some toasted sourdough toasts. No matter how you have this sauce, you are going to fall in love with it. This low carb recipe also has the goodness of spinach and deliciousness of sun dried tomatoes. Even though simple, this creamy mushroom recipe packs tons of flavors. If you love mushrooms then it’s a promise that you are going to love this recipe too. And all it takes is just 20 minutes to cook this sauce. Also, did I tell you with just a handful of ingredients? 🙂
To make this delicious Italian mushroom recipe, you could use brown mushrooms or even closed cup mushrooms. Generally, the meaty and plump ones work better here. Also, while I have detailed the recipe for you, you can easily tweak it to suit your taste. For instance, you could add more or lesser of the onions and garlic quantities I have mentioned. Moreover, I have added white wine to make my creamy garlic butter Tuscan mushrooms, but you could leave it alcohol free too. Chicken or vegetable stock work as a wonderful substitute to white wine here.

Deliciously creamy
This divine mushroom sauce is meant to be creamy so you really can’t skimp on it! However, you could choose to add half and half or even single cream, if you are feeling health conscious. And if you’d like to go all the way and indulge yourself then heavy cream is what you need to add here. The only thing you need to bear in mind is to not soak the mushrooms in water in order to clean them. Just wipe each of them with a moist kitchen towel or party brush, to remove dirt from them. If you soak them in water, they will absorb water and become spongy. And this will prevent them from browning when cooked. In fact, remember to always clean mushrooms just this way.

Creamy garlic butter Tuscan mushrooms
Equipment
- Shallow cooking pot
Ingredients
- 300 g mushrooms
- 200 g baby spinach
- ½ cup sun dried tomatoes
- ¼ cup onions finely chopped
- 3-4 tbsp garlic finely chopped
- 2 tbsp dried Italian herbs
- 2 tbsp black pepper
- 2 tbsp chilli flakes optional
- 2 tbsp butter
- ½ cup cream
- ¼ cup parmesan cheese grated
- ½ cup white wine or vegetable/chicken stock
- 5-6 fresh basil leaves
- salt to taste
Instructions
- Over medium heat, add the butter and let it melt in your cooking pan. Then add the garlic, once fragrant throw in the garlic and let it turn fragrant. Next add the onions and a pinch of salt, to help them soften
- Then add the sun dried tomatoes with a tablespoon of its oil, cook the mushrooms in this, over medium high heat for 5-7 minutes
- Add the wine (or stock), over medium heat, stir and cook until it reduces to half. Next add the spinach and stir it in. Now add the cream, dried herbs, salt, pepper and chilli flakes. Simmer over medium heat until the sauce thickens
- Add the grated parmesan and basil leaves and turn the flame off. Give the sauce a gentle mix and serve hot with your favorite meal. Enjoy!
Notes
- If you want your mushroom sauce to be thicker, you could also add in a tablespoon of cornstarch slurry in step 3
- In case using wine, you could use Sauvignon Blanc or even Chardonnay here
- If your spinach leaves are big, chop then into thin strips and add to the sauce
