Crinkle cookies are a classic Christmas bake. These chewy, yummy and pretty cookies are very easy to put together, as well. Moreover, all this with only a handful of ingredients. Since I love the combination of chocolate and coffee, one of my first bakes this season are these chocolate and coffee crinkle cookies. And almost half of them are already over. Not just my husband and I, but even our friends who were home over the weekend loved them. So, I have to bake another batch of these to put in my cookie gift boxes. Since the crinkle effect on the cookies look so pretty, they make for lovely gifts. And not just this festive season. You could gift your family and friends these delicious cookies anytime of the year, and they will love it. I have seen that kids and adult both love them, alike.
These chocolate cookies aren’t overtly sweet and are perfect to dunk in your glass of milk. Also, it’s a great tea time snack as well. In fact, the husband loves it to such an extent that he even has these cookies as dessert! The combination of chocolate and coffee makes them even more yum. Now, not only do these cookies taste fabulous, these are also very easy to make. In fact, you could fit these in your last minute Christmas baking plans, too. Your chocolate and coffee crinkle cookies will stay fresh for a week to 10 days. However, let me also tell you that, these yummy bakes won’t last that long. But be sure to store them in an air tight container once baked.

Variations
You could add any flavour you’d like to your chocolate crinkle cookies too. For instance, instead of the vanilla essence you could add almond, orange or even peppermint extracts. You could also add a handful of chocolate chips to your cookie dough to enhance the chocolaty flavour even more. So, you could take mine as your base recipe for chocolate crinkle cookies and modify it to suit your taste preferences. Chocolate and coffee crinkle cookies
Equipment

Ingredients
- 1 cup plain/all purpose flour
- 2 eggs
- ¼ cup olive oil
- ½ cup unsweetened cocoa powder
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp instant coffee powder
- 1 tsp baking powder
- 1 tsp salt
- ½ cup powdered sugar
For garnish (optional)
- 1 bag chocolate stars
Instructions
- Mix together the cocoa powder, flour, baking powder, salt and coffee powder
- In another bowl whisk together throughly the oil, granulated sugar, vanilla essence with the eggs (add one at a time). Next, add spoonfuls of the flour mixture to the wet mixture and combine using a spatula - do not over mix. Cover and let the mixture chill in the refrigerator for 4 hours to overnight
- Before baking, take the powdered sugar in a bowl. Scoop out the cookie dough using a cookie/ice cream scoop, roll between your palms to form a ball, dredge in the powdered sugar and place on parchment line baking tray
- Place each rolled dough ball 1-2 inches apart and bake in a pre-heated oven at 180°C for 10-13 minutes. When done, remove and immediately press a chocolate star (if using) in the centre of each cookie
- Let them cool on the tray for 5 minutes and then transfer to a cooling rack to cool completely. Repeat with the remaining dough
- Your delicious chocolate and coffee crinkle cookies are now ready to be enjoyed with family and friends. Store the cookies in an air tight container so that they don't become dry
Notes
- These cookies will stay fresh for up to a week to 10 days
- Chilling the cookie dough results in puffier cookies. The longer you can keep it to chill, the better
- The cookie dough is going to be sticky when working with it to form the balls. Work quickly and wash your hands between each batch
- When not working with the dough, between batches, make sure to keep it in the refrigerator
