A quick and easy, pressure cooker recipe of lightly, yet deliciously spiced chicken stew made with veggies that’s a wonderful meal on a chilly day or to have when you want to eat a light
The husband and I love stews. Not only when the temperatures are low but even when we crave a light meal, we fall tend to make them. Healthy and nutritious, stews are not only quick and easy to cook but are a complete food in itself. My stews generally have protein and vegetables in them, which we love pairing with toasted breads for our meals. And, I, usually make a big batch of it so that if we feel like even having it with rice or just as is other times, we can do that. So, post the festive and New Year party feasts, when we yet again craved some simple and sumptuous for lunch I made the Bengali chicken stew with vegetables. This wonderful chicken stew recipe is that of my father’s. In fact, he’d made it a few days back as well, at home, in Mumbai.
This delicious and lightly spiced stew is a firm family favorite. And ever since the first time I made it for the husband, he too has become a fan of it. Besides being a yummy and fulfilling recipe, this Bengali chicken stew with vegetables is also a pressure cooker recipe. So, you can imagine the ease of putting this together for a meal for your family. Moreover, since this chicken stew is flavored with whole, warming spices it is a fantastic food option when you are feeling under the weather. I, promise, a big bowl of this chicken stew with vegetables would be a wonderful way to make you feel better. It definitely has worked for us and we love it. In fact, you could even replace the chicken here with goat meat or lamb. They tastes equally amazing.

Make it your way
Like how my father makes it, I too love adding loads of vegetables to my Bengali style chicken stew. Here, I’ve have added corn cobs, carrots, onions and French beans. In fact, I add whatever I can find in my refrigerator. A few of my other favorites are potatoes, raw papaya and beets. So, feel free to add as many or as little of your favorite veggies in this delicious recipe. In fact, if you wish you could leave out the chicken and make this a completely vegetarian stew, or like I said replace it with lamb/mutton. Now, I’ve used oil to make the stew and not butter, which again if you prefer, you could.
I love serving this stew sprinkled with freshly cracked pepper, coriander leaves and wedges of lime. Ah what bliss it is to have it this way on a chilly day. Even if not chilly, you could always enjoy a bowl of this delicious Bengali chicken stew with vegetables, just the way we did in Mumbai. This is a great recipe to enjoy on any day. Bengali chicken stew with vegetables
Equipment
- Pressure cooker
Ingredients
- 1 kg chicken drumsticks skinless
- 100 g French beans cut in halves
- 3 carrots cut in thick roundels
- 3 onions cut in quarters
- 4 cobs of corn cut into halves
- 1 large tomato chopped
- 1 tbsp ginger- garlic paste freshly grated
- 1 tbsp turmeric powder
- 1 tsp chili powder optional
- 2-3 fresh chilis optional
- 1 bay leaf
- 2 tbsp black peppercorns
- 1 inch cinnamon stick
- 3-4 green cardamoms
- 3-4 cloves
- 2 tbsp oil
- salt to taste
To garnish
- lime wedges
- freshly cracked pepper
- coriander leaves
Instructions
- Wash the chicken well and par-boil them until 50-60% cooked
- Set the oil in the pressure cooker to heat. Add the peppercorns, bay leaf, cinnamon, cardamom, cloves and ginger-garlic paste. Cook for couple minutes or until fragrant
- Add in all the vegetables and give a good stir. Next add in the partially cooked chicken, salt, turmeric and chili powders, mix well
- Add the tomato and pour in 2 cups of water, cover and pressure cook until the chicken and vegetables are fully cooked. Open the lid of the cooker once the pressure settles
- Serve your delicious and nutritious Bengali style chicken stew with vegetables in big soup bowls. Garnish with pepper, lime wedges and fresh coriander leaves and serve right away. Enjoy!
Notes
- Curry cut chicken pieces are also a great option for the stew instead of chicken drumsticks
- You can use other vegetables like potatoes, raw papaya, beetroots etc also
- Chicken can be replaced with lamb or goat meat too
- 1 cup = 250 millilitres
